Raw Vegan Coconut Chocolate Fudge

I love raw cacao powder. What is cacao? Wait, did you say cocoa? Nope I said cacao!

Cacao is basically raw chocolate bean, without all the milk, sugar and other additives that make up processed chocolate.  Raw cacao is packed with antioxidants that destroy free radicals in your body.  These free radicals can accelerate the aging process and may even increase your risk for heart disease and certain cancers.  That basically means cacao has good stuff that fights the bad stuff.

I’m not giving you the green light to overindulge and eat this every day.  Remember: Everything in moderation.  Let’s say it again: Everything in moderation. Ok, back to the cacao.  If you are a chocolate lover, here is a healthier way to eat it, without all the processed junk.

This Raw Coconut Fudge is vegan, gluten-free & dairy-free.  I keep this in my refrigerator all the time!

Raw Coconut Fudge

Vegan, Chocolate, Raw, Cacao, Superfood

Ingredients

  • 3/4 cup cacao powder
  • 1/4 cup coconut oil
  • 1/4 cup 100% maple syrup
  • 1/4 cup + 2 tablespoons unsweetened shredded coconut

Instructions

  1. Mix all the ingredients together except 2 tablespoons coconut until well blended.
  2. You can either roll into balls or place into a small baking pan and slice into squares.
  3. Place reserved coconut and place in small bowl. Dip the balls or squares in there.
  4. Eat immediately or store in the refrigerator for 1-2 days.

If you don’t like coconut (like me) you can easily substitute pomegranates or a dried fruit if you’d like.
