    These pinwheels are made with just 5 simple, easy to find ingredients and there is no cooking involved at all. Perfect for when you are hosting those holiday parties.

    These low carb, gluten free red pepper spinach pinwheels are an easy holiday appetizer that comes together quickly with simple, wholesome ingredients. They offer fresh flavor, vibrant color, and a satisfying bite that works for parties, meal prep, or healthy snacking.

    This recipe is great for anyone looking for a festive low carb appetizer that fits gluten free lifestyles. They take only 15 minutes to make and are easy to prepare ahead of time.

    Recipe Ingredients

    • Low Carb Tortillas - I like the texture of these low carb, gluten free tortillas but you can use whatever you can find in the grocery store. These spinach wraps are fun and festive for the holidays.
    • Cream cheese - Plain, full fat cream cheese is best in this recipe.
    • Roasted red peppers - These are easy to find in any grocery store. I use these that are GMO free and packed in water (and not oil)
    • Baby Spinach - You can use either frozen or fresh spinach in this recipe. If you do use frozen spinach, please make sure you defrost in completely and then squeeze out all of the water in the spinach before preparing. If you don't do this your pinwheels will be soggy.
    • Mozzarella cheese -  I always use full fat Mozzarella cheese. I like to buy a block of whole milk fresh Mozzarella cheese and grate it myself to ensure there are no unnecessary additives or fillers in there.

    How To Make These Spinach Red Pepper Pinwheels

    Chop the spinach.

    Spread 2 oz of cream cheese onto each of the tortillas.

    Add ¼ of the spinach to each of the tortillas.

    Arrange red peppers on top of the spinach of each tortilla.

    Sprinkle cheese on top of each tortilla.

    Start at one end, and tightly roll each of the tortillas.

    Wrap each of the tortillas in plastic wrap. Chill for 2 hours in the refrigerator. Unwrap, cut off the ends and slice into 1 inch pieces.

    Recipe FAQ's

    Can these pinwheels be made the day before?

    Absolutely! It's such a time saver when prepping for a party or gathering. I actually think the longer you chill them, the better they taste!

    How do I prevent these from getting soggy the next day?

    These really don't get soggy because the spinach is raw and not watery. Make sure not to overstuff each tortilla and that will control the moisture and prevent sogginess. I also place them in an airtight container wrapped in paper towels to absorb any extra moisture.

    Can I use a different kind of cheese besides Mozzarella?

    Definitely! These pinwheels would be delicious with cheddar, Monterey jack, Pepper jack....whatever is your favorite!

    Recipe Tips

    • I think these pinwheels taste even better the longer you chill them in the refrigerator. I take them out right before serving.
    • You can make these even more festive using spinach tortillas or even red pepper tortillas (although those aren't as easy to find).
    • Get creative with any mix-in's that you like. You can add bacon, chopped turkey or other veggies you'd like. The possibilities are endless with these.

    Ingredients

    • 4 large low carb tortillas

    • 12 ounces roasted red peppers jar, liquid drained
    • 1 cup baby spinach
    • 1 cup Mozzarella cheese shredded
