- Low Carb Tortillas - I like the texture of these low carb, gluten free tortillas but you can use whatever you can find in the grocery store. These spinach wraps are fun and festive for the holidays.
- Cream cheese - Plain, full fat cream cheese is best in this recipe.
- Roasted red peppers - These are easy to find in any grocery store. I use these that are GMO free and packed in water (and not oil)
- Baby Spinach - You can use either frozen or fresh spinach in this recipe. If you do use frozen spinach, please make sure you defrost in completely and then squeeze out all of the water in the spinach before preparing. If you don't do this your pinwheels will be soggy.
- Mozzarella cheese - I always use full fat Mozzarella cheese. I like to buy a block of whole milk fresh Mozzarella cheese and grate it myself to ensure there are no unnecessary additives or fillers in there.
How To Make These Spinach Red Pepper Pinwheels
Chop the spinach.

Spread 2 oz of cream cheese onto each of the tortillas.

Add ¼ of the spinach to each of the tortillas.

Arrange red peppers on top of the spinach of each tortilla.

Sprinkle cheese on top of each tortilla.

Start at one end, and tightly roll each of the tortillas.

Wrap each of the tortillas in plastic wrap. Chill for 2 hours in the refrigerator. Unwrap, cut off the ends and slice into 1 inch pieces.
