If you don't have extra virgin olive oil, avocado oil is a great alternative. Avocado oil has a high smoke point and is loaded with nutrients since it's made from the pulp of avocados.
This black bean and sweet potato skillet also tastes delicious with shredded cooked chicken or sliced cooked sausage (breakfast sausage would be perfect!). They even add more protein to this dish as well.
Add more vegetables or even chopped tomato if you'd like. Butternut or acorn squash and even zucchini would be wonderful additions in this recipe.
A sunny side or even scrambled eggs would also be delicious either mixed in the hash or placed right on top. Eggs add more protein and tons of nutrients too.
