- Pure vanilla extract - I use pure vanilla extract which doesn't contain any artificial flavors or additives, it's just pure vanilla made from alcohol. I use this one.
- Refined avocado oil - This is a versatile oil for cooking and baking with a high smoke point, a clean neutral flavor and loaded with healthy fat.
- Granulated Monk fruit - (Or sugar, sugar alternative of your choice) but I used the granular form of Monk Fruit for this recipe. The brand I use all the time is this one.
- Eggs - Use cage free, organic eggs for extra nutrients and nutrition.
- Almond extract - This adds a light, delicious, nutty taste.
- All purpose gluten free flour - This gluten free all purpose flour is so versatile and can be substituted for equal amounts of regular all purpose flour.
- Baking powder - I use a GMO-FREE, aluminum free baking powder like this one in all of my baked goods.
- Salt
- Powdered Monk fruit - I used the powdered or confectioner's form of Monk Fruit for this recipe. The brand I use all the time is this one. You can also substitute with the sugar free alternative of your choice.
- Unsweetened almond milk - I used unsweetened almond milk to make sure there are no added sugars or ingredients in this bread.

How To Make This Gluten Free Almond Cake
Preheat the oven to 350 degrees F.
In a large bowl add the yogurt, vanilla, oil, sugar, eggs and almond extract. Whisk that together until completely combined and smooth.

Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.


Now pour this batter into a loaf pan lined with parchment paper.

Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean. While the cake is baking, prepare the almond glaze.
In a bowl add the powdered sugar, almond extract and almond milk. Whisk together until a thick glaze is formed. Start with 2 tablespoons of almond milk and add more as needed to thin out the glaze to the right consistency, similar to glue.


Take the cake out of the oven and allow it to cool completely. Remove the cooled cake from the loaf pan and pour the glaze over the top of the cake, letting it fall over the sides.
Then sprinkle sliced almonds all over the loaf.

- 2-3 tablespoons unsweetened almond milk
