Ingredients

Instructions

  • Preheat the oven to 350 degrees F.
  • In a large bowl add the yogurt, vanilla, oil, sugar, eggs and almond extract. Whisk that together until completely combined and smooth.
  • Then add the salt, baking powder and flour into the bowl and mix everything again until just incorporated. Make sure not to overmix.
  • Now pour this batter into a loaf pan lined with parchment paper.
  • Bake in the oven for 35-40 minutes or until a toothpick is stuck in and comes out clean.
  • While the cake is baking, prepare the almond glaze.
  • In a bowl add the powdered sugar, almond extract and almond milk. Whisk together until a thick glaze is formed. Start with 2 tablespoons of almond milk and add more as needed to thin out the glaze to the right consistency, similar to glue.
  • Take the cake out of the oven and allow it to cool completely.
  • Remove the cooled cake from the loaf pan and pour the glaze over the top of the cake, letting it fall over the sides. Then sprinkle sliced almonds all over the loaf.
  • Cut into 8 slices and enjoy!
