recipe ingredients for this baked apple protein oatmeal

- Applesauce - There's no need for added sugar in your applesauce, it's naturally sweet on it's own.
- Maple syrup - Using Maple syrup in recipes is optimal because a little goes a long way. Look for 100% Pure Maple Syrup to ensure it's made only from boiled down sap from maple trees. You can also use sugar free maple syrup for a lighter alternative.
- Pure vanilla extract - Use pure vanilla extract which doesn’t contain any artificial flavors or additives, it’s just pure vanilla made from alcohol. I use this one.
- Cinnamon - My favorite spice! Cinnamon is so versatile and I use it for most of my sweet recipes and baked goods.
- Unsweetened almond milk - Use Unsweetened almond milk to make sure there are no added sugars or ingredients in this baked oatmeal.
- Greek yogurt - Use full fat dairy products for the best taste and quality.
- Protein powder - It's very important to not only the nutrition information like calories, protein, fat and carbohydrates, but also read the ingredient list. I use Orgain Protein Powder which is vegan, soy free, gluten free, dairy free, sugar free and non-GMO.
- Chia seeds - These little seeds are a nutritional powerhouse! Chia seeds are loaded with fiber, antioxidants and plant based protein.
- Baking powder - Use a GMO-FREE, aluminum free baking powder like this one.
- Rolled oats - Rich in soluble fiber, rolled oats can reduce cholesterol and help regulate blood sugar. You can use whatever oats you have in your house and see what you personally like best.
- Apples - The best types to use for this baked oatmeal are firm, crisp varieties like Honeycrisp, Pink Lady, Fuji or Granny Smith.
- Walnuts - Use chopped almonds, chopped walnuts or chopped pecans in this salad and they all taste delicious.

how to make this vegan apple protein oatmeal
Preheat oven to 375°F. Grease a medium (8 cup/2L capacity) baking dish. A narrower dish with higher sides is preferred for even moisture retention.
In a large bowl, combine apple sauce, maple syrup, Greek yogurt, vanilla, cinnamon, and salt. Use a hand-held electric mixer or a whisk to beat everything together until smooth.

Beat in the almond milk. Stir in the chia seeds and allow to sit for 5-10 minutes to thicken.

Peel and slice the apples into ¼ inch thick slices. Fold in the oats, protein powder and baking powder until everything is evenly distributed.

Fold in the walnuts (or pecans, if you are using) and sliced apples (optional: reserve some to sprinkle on the top).
Pour into prepared baking dish. Top with any reserved apple slices and walnuts if desired.

Bake for 30-35 minutes until edges are just beginning to turn golden and the center is set and not wet.

Remove from oven an allow to cool for at least 10 minutes before serving.
Serve with maple syrup, sliced fruit, Greek yogurt or drizzle with almond butter or another nut butter.
