With just 4 ingredients, these Pomegranate Brie Pistachio Phyllo Cups will be the easiest (and prettiest) appetizers you will make!
I bet you can't guess what the 4 ingredients are? Hee hee….
I admit, I can get a little stressed (my husband might call it crazy) when I entertain. I am always looking for easy appetizers that everyone will love.
These cheesy bites are just that!
These can be ready in 15 minutes. No stress.
No crazy directions.
These are just what I need. And who doesn't love a pretty little bite-sized appetizer?
They are festive, pretty and easy to make.
I am not the best entertainer. I mean, I really enjoy having people over, but I do get a little crazy about everything looking neat and perfect.
I wish I were a little more laid back about it, but I am definitely not. At all.
We host Christmas Eve every year and it's my favorite. I love having our family over in our cozy house with all of our family and festive decorations.
I absolutely love to decorate and cook festive recipes.
But as many of you know, it's not easy to get all of your shopping done, wrapping presents, cooking, baking AND keeping your house neat and clean enough to have everyone over. Why is it so hard?
And this is why and when I start to get a little crazy...
Is anyone else like me and just wants everything to be perfect? Now don't get me wrong, I have definitely loosened up (a bit) since I've had my children.
I mean, you have no choice but to lighten up a little.
Before I had kids I would literally clean the baseboards of my house before everyone came over. Now after three kids, I don't even think I have noticed what my baseboards look like.
And that's probably a good thing!
But now that I have kids and I am busy taking care of them as well as getting everything ready for Christmas, I really don't have the time like I used to. That's ok, I just needed to adjust my expectations and simply just do the best I can.
Parents are in survival mode at Christmas time.
I remember I used to make pounds and pounds of Chicken Francese for Christmas Eve. It would literally take me hours because I did everything by hand and the whole thing was homemade.
But then I realized that I just didn't have the time to do that anymore and I ordered it from a local restaurant. And it was delicious.
And a life saver.
But since I do get a little crazy trying to get everything done, I need to make easy and simple recipes that don't take a lot of thought and effort. Do you see where I'm going with this?
Now enter these beautiful little bites...
I love the pre-made phyllo cups because you literally take them out of the box and line them in a baking sheet. I mean, it doesn't get any better or easier than that.
They get so crispy and toasty when you bake them in the oven for 10-15 minutes.
What I love about these little bites (besides being so easy) is that I love the sweet and salty combination. I don't care if it's an appetizer like this, main dish or dessert, I love sweet and salty together.
And the slight sweetness of the pomegranates paired with the saltiness of the pistachios complements each other perfectly.
And we can't not forget how pretty and festive they are! The red and green are perfect for the holidays, although I make these all year long.
I like to always keep these phyllo cups in the house at all times. You know, just in case a last minute get together happens.
Like I am that laid back to have a spontaneous get together. That's a good one.
Maybe some day...
- 15 mini phyllo cups
- ¼ cup pomegranate seeds
- 2 ounces brie cheese
- ¼ cup dry roasted and salted Pistachio pieces
Tell me, are you a cheese lover? I like a lot of different cheeses, Manchego, Monterrey Jack, mozzarella and Cheddar all being my favorites.
Notice they are all hard cheeses. I do not love soft cheese at all, but I like these phyllo cups.
Does that make sense?
Put it this way, I would never eat baked brie, but I like that it's paired with these crunchy phyllo cups.
I am all bout texture. It probably doesn't make sense, but I can be complicated for sure.
I am super picky and texture is really important to me.
Because each little phyllo cup has such a small amount of brie, this is perfect for me. I actually like the taste of brie, it's just a little too gooey for me if it were a lone.
