Salads are my favorite all year long, especially in the summer. I am always looking for easy to make, customizable, healthy ways to add veggies in my diet.
Some people might have time to create all of these delicious elaborate salads in the summer, but it's actually the opposite. I don't have time to do that so the simpler the salad, the better.

Why You Should Make This Green Goddess Salad
This Green Goddess Salad is so incredibly easy to make. It's one of those healthy dishes that are always a crowd pleaser and perfect to bring to parties and gatherings.
I love adding lean protein to this salad too. Grilled chicken, tuna, steak or shrimp can easily be added and make a wonderful addition.
Mix it up and add new different proteins each time you make it. Or leave it as a simple yet yummy side dish that will be perfect alongside most main dishes!
Recipe Ingredients
- Romaine lettuce - I chopped up romaine lettuce hearts but you can easily buy the already chopped romaine.
- Cucumbers - I use English cucumbers and finely chop them.
- Onion - I used red onion in this dressing for it's slightly sweet taste, but you can use whatever onion you have in your house. Shallots are a wonderful choice too.
- Baby spinach - I use the organic baby spinach that is already chopped in a convenient bag.
- Extra Virgin Olive Oil - I like to use this EVOO for its light taste that makes it perfect for salad dressings.
- Lemon juice - I use two lemons and freshly squeeze the juice.
- Walnuts - I use these organic walnuts and keep them in my house for a snack at all times.
- Nutritional Yeast - This plant based addition has a wonderful cheesy taste and can be a dairy free alternative to so many of your dishes!
- Basil - Always use fresh basil for your salad dressings. The taste is superior.
- Garlic - I use fresh garlic but have also used this minced garlic in a pinch. It's so convenient to keep in the refrigerator.
- Apple Cider Vinegar - My absolute favorite for so many things! Apple Cider Vinegar has been shown to help maintain blood sugar levels and cholesterol as well as containing prebiotics. It is organic and non-GMO.
How To Make This Green Goddess Salad
Add the basil, spinach, onion and garlic in a food processor.
Add nuts, oil, lemon juice, nutritional yeast, salt and vinegar.
Combine and pulse until a uniform consistency is reached.
Chopped romaine lettuce and cucumbers.
Pour dressing over the chopped salad and enjoy!

Green Goddess Salad
Ingredients
- 3 large romaine lettuce hearts
- 3 large cucumbers
- Dressing:
- ½ red onion
- 2 cups baby spinach
- ¼ cup extra virgin olive oil
- 2 lemons juice
- ⅓ cup nutritional yeast or Parmesan cheese if not vegan
- ¼ cup walnuts
- ½ cup basil
- 1 teaspoon garlic
- 1½ tablespoons apple cider vinegar
- salt and pepper to taste
Instructions
- Add the basil, spinach, onion and garlic in a blender bowl.
- Add walnuts, oil, lemon juice, nutritional yeast, salt and vinegar.
- Beat until a uniform consistency is formed.
- Finely chop romaine lettuce and cucumbers.
- Pour dressing over salad.
