Why You Should Make This BLT Egg Salad
This delicious egg salad is so simple to make, even one of your children can help you. Personally I am always looking for super easy recipes, especially in the summer and this egg salad is literally just mixing the ingredients together in a bowl.

This yummy egg salad is also gluten free, sugar free and low carb which makes it a healthy option. I like to bring healthy dishes to gatherings and potlucks so I am guaranteed to have at least one nutritious option.
And of course this salad has bacon in it which always helps!
Recipe Ingredients
- Eggs - I use farm raised, organic eggs in this salad.
- Bacon - I always use nitrate/nitrite free, uncured bacon. This is the kind that isn't cured with harmful additives and instead is cured with celery and salt. Much healthier option and less processed.
- Tomatoes - I like to use seasonal cherry or grape tomatoes because they are lightly sweet and easy to slice in half.
- Butter lettuce - This is always my first choice for lettuce wraps because it's large enough, crunchy and hearty enough to hold up.
- Green onion - Also known as scallions, these have a mild taste and are extremely versatile.
- Mayonnaise - The only kind of mayonnaise I like to use is one that is made with avocado oil. I use this one and it tastes delicious.
- Dijon mustard - It always adds so much flavor to salads, I use this one.
- Paprika - I love the mild taste and slightly sweet flavor of Paprika.
- Sour cream - Using full fat dairy products offers the best flavor and quality.
How To Make This BLT Egg Salad
It doesn't get much easier that this! Simply put the ingredients in a large mixing bowl and mix to combine.

Recipe FAQ's and Expert Tips
You guys know that I love to freeze just about everything, but I probably wouldn't recommend freezing this salad. But don't worry, I doubt there will be any leftovers anyway!
Trust me, I do not like mayonnaise either, which is why I only use the mayo made with avocado oil and I only use a small amount. With that being said, I am sure you can also use plain Greek yogurt too. Or even half of a mashed avocado and a little Greek yogurt!

BLT Egg Salad
Ingredients
- 6 large hard boiled eggs chopped
- ¼ cup bacon crumbled about 4 slices of bacon
- ½ cup grape tomatoes halved
- ¼ cup green onion chopped
- ¼ cup mayonnaise
- 2 teaspoons dijon mustard
- pinch Paprika
- 1 tablespoon sour cream
- salt and peper to taste
- 1 cup butter lettuce chopped
- butter lettuce or other type of sturdy lettuce for wraps
Instructions
- Combine all of the ingredients in a large mixing bowl.
- Serve immediately, or chill before serving if desired.
