Why You Should Make These Instant Pot Chicken Tacos
This is one of those recipes that are so easy to make, but also loaded with flavor. Just because you are trying to eat healthier and lighter doesn't mean you have to sacrifice flavor.
These tacos are high in protein, low in fat and carbs, sugar free and gluten free. Add this to your new year resolution healthy recipe list, there's no guilt here!
Thee are so easy to prepare and will be ready in just 30 minutes. Again, perfect for those chaotic weeknights when you barely have time to get dinner on the table.
Recipe Ingredients
- Chicken breasts - Choose skinless, boneless chicken breast and if possible, organic. I know it can get expensive so I buy a bunch when it goes on sale.
- Taco seasoning - I use this taco seasoning because it's so versatile and can be used in so many recipes. It's organic, gluten free and vegan.
- Tortillas - I use these low carb tortillas but you can easily use whatever you have in the house.
- Salsa - I like to use this recipe for my Green, Red Avocado Salsa but you can use store bought as well.
- Avocado - Definitely my favorite fruit! Avocados make the perfect addition to so many meals!
Optional Toppings for Instant Pot Chicken Tacos
- Cilantro - One of my favorite herbs! I realize some people hate cilantro so you can easily leave this out.
- Lime - Always use fresh lime juice, it will give these tacos the best, most fresh flavor.
- Jalapeno peppers - The bigger the peppers, the tastier. They are natural smaller than bell peppers but you want them to be more than one bite each.
- Sour cream - Completely optional. Personally, I don't like sour cream but I realize many love to top their tacos with it.
- Hot sauce - Always my favorite! I love this organic variety pack for more options.
How To Make These Instant Pot Chicken Tacos
In a bowl mix chicken cubes with the taco spice mix.
Add the seasoned chicken, a cup of water, and salt to the instant pot and stir to mix.
Select the PRESSURE COOK button on HIGH PRESSURE for 10 minutes. (Make sure the valve is in the SEALING position).
Once done, allow the pressure to release naturally for 5 minutes, then quick release pressure by manually moving the valve from SEALING to VENTING position.
Open the lid carefully and select the CANCEL button. Remove the chicken pieces to a bowl and shred them using a fork.
Build your tacos by adding shredded chicken, mashed avocado, salsa, and cilantro on top of each tortilla. You can also add some sour cream and a few jalapenos for extra flavor. Squeeze some lime juice on top.
Heat the tortillas in a pan over low heat on the stove if desired. Serve hot.
Recipe Tips
These instant pot chicken tacos are also super customizable according to your dietary needs and likes/dislikes.
You can use boneless, skinless chicken thighs as a substitute for chicken breasts.
You can use store bought salsa for convenience if you'd like. Also, you can use salsa verde (made with tomatillos instead of tomatoes) to mix it up.
Top with whatever shredded cheese you'd like. Shredded Cheddar, Monterrey Jack, Cotija and Manchego are all delicious cheese for topping.
Lettuce wraps make a wonderful alternative to tortillas as well. Bibb, Romaine and Butter lettuce all make wonderful, crunchy substitutions.
