Ingredients

  • 3 large romaine lettuce hearts
  • 3 large cucumbers
  • Dressing:
  • ½ red onion
  • 2 cups baby spinach
  • ¼ cup extra virgin olive oil
  • 2 lemons juice
  • cup nutritional yeast or Parmesan cheese if not vegan
  • ¼ cup walnuts
  • ½ cup basil
  • 1 teaspoon garlic
  • tablespoons apple cider vinegar
  • salt and pepper to taste

Instructions

  • Add the basil, spinach, onion and garlic in a blender bowl.
  • Add walnuts, oil, lemon juice, nutritional yeast, salt and vinegar.
  • Beat until a uniform consistency is formed.
  • Finely chop romaine lettuce and cucumbers.
  • Pour dressing over salad.

Notes

To store: Place any leftovers in an airtight container in the refrigerator for 1-2 days.
