Ingredients

romaine lettuce hearts

cucumbers
Dressing:
½
red onion

cups
baby spinach
¼
cup
extra virgin olive oil

lemons
juice
⅓

nutritional yeast
or Parmesan cheese if not vegan
¼
cup
walnuts

cup
basil

teaspoon
garlic

tablespoons
apple cider vinegar
salt and pepper
to taste
Instructions
Add the basil, spinach, onion and garlic in a blender bowl.
Add walnuts, oil, lemon juice, nutritional yeast, salt and vinegar.
Beat until a uniform consistency is formed.
Finely chop romaine lettuce and cucumbers.
Pour dressing over salad.
Notes
To store: Place any leftovers in an airtight container in the refrigerator for 1-2 days.
