I admit, I can get a little stressed (my husband might call it crazy) when I entertain. I am always looking for easy appetizers that everyone will love.
These cheesy bites are just that!
These can be ready in 15 minutes. No stress.
No crazy directions.
These are just what I need. And who doesn't love a pretty little bite-sized appetizer?
They are festive, pretty and easy to make.

Why You Should Make These Pomegranate Brie Phyllo Cups
Not only do these have a pretty presentation, but they are the perfect balance of sweet and salty.And let's not forget that these bites are portion controlled too.
What I love most about these phyllo cups is that you can easily prepare them ahead of time, wrap them with plastic wrap or aluminum foil and place in the refrigerator until you are ready to bake and serve. When I am entertaining, I love any recipe that can be prepped earlier, it is such a time saver.
Pre-made phyllo cups because you literally take them out of the box and line them in a baking sheet. I mean, it doesn't get any better or easier than that.
They get so crispy and toasty when you bake them in the oven for 10-15 minutes.
And the slight sweetness of the pomegranates paired with the saltiness of the pistachios complements each other perfectly.
And we can't not forget how pretty and festive they are! The red and green are perfect for the holidays, although I make these all year long.
Recipe Ingredients
- Phyllo cups - These are so easy to find at most grocery stores, especially during the holidays.
- Pomegranate seeds - The little seeds are inside of the pomegranate and have a slight little juice inside of them.
- Brie cheese - Slightly salty and creamy, this adds a wonderful texture to these phyllo cups.
- Pistachio- I like the dry roasted and salted pistachios. They are my favorite.
Recipe Tips
The possibilities are endless with these little bites. I've made these with cranberries and even raspberries instead of pomegranates and they both were delicious (and pretty too!)
I also used crushed pecans because I ran out of pistachios and they were just as delicious. The idea is to use whatever you like and whatever you have in your house to make it easier.
You can store any leftovers in the refrigerator in an airtight container. I like to reheat them in the oven at 300 degrees for 10 minutes instead of the microwave since they might get a little soft. Baking them in the oven helps to maintain the crispness.

Pomegranate Brie Pistachio Phyllo Cups
Ingredients
- 15 mini phyllo cups
- ¼ cup pomegranate seeds
- 2 ounces brie cheese
- ¼ cup dry roasted and salted Pistachio pieces
Instructions
- Preheat oven to 375 degrees.
- Line a baking sheet with parchment paper and place phyllo cups on top.
- Place a small amount of pomegranates in each cup.
- Then slice a small piece of brie and some pistachios in each shell.
- Bake for 10-12 minutes until cheese has melted.
- Serve immediately!

Hi Lauren I love the taste of Brie however I’ve never used it myself. I’ve always been unsure whether you use the rind or not. Most recipes I’ve seen don’t specify this one detail. Could you make a little note ‘how to’ on using Brie please.
