With the holidays coming up I really need to up my healthy snack game these days. I have been eating mindlessly and not being as careful as I usually am, mainly because this time of year is just busier and more stressful.
Yes, I love the holidays but man they are exhausting. And every year at this time I end up eating mindlessly because I just have much less time and I am way more busy.
So I need to adapt so I do not get into terrible habits, feel tired all the time and put on extra weight. Who the hell needs or want any extra weight?
With that being said, I made a double batch of these mint chocolate chip balls so I eat these instead of the rest of my kids' grilled cheese.
Preparing healthy meals and snacks is the number one way to prevent mindless eating. If you have healthy choices right in front of you, you are more likely to make a good choice.
If you have no nutritious options and all you have are your kids leftover pizza and chips, you will most likely eat them. Especially if you are super hungry because your blood sugar is dropping and you need to eat ASAP.
That is why choosing one day a week to prepare meals, snacks, smoothies etc is very important for sticking with your clean eating lifestyle. It is crucial.
Meal planning and preparing is the absolute first thing I tell my clients to do. It is nearly impossible to stay on plan when you don't meal prep.
That is because most of us do not have all the time in the world to cook all day long.

Crispy Mint Chocolate Chip Balls
Ingredients
- ½ cup natural peanut butter or almond butter
- ½ cup 100% maple syrup can use honey but it won't be vegan anymore
- ½ teaspoon pure vanilla extract
- 1 cup oats
- ¼ cup ground flax seed
- ½ cup crispy brown rice cereal
- ¼ cup mini chocolate chips
- ¼ teaspoon mint extract
- ¼ cup green tea matcha powder
Instructions
- Mix all of the ingredients together in a medium size bowl until thoroughly combined.
- Place the bowl in the refrigerator for 10-15 minutes to harden.
- Remove from the refrigerator and roll into 1 inch balls.
- Store in the refrigerator in an airtight container for up to 5 days (if they last that long!)
