    Pumpkin Spice Overnight Oats

    These Pumpkin Spice Overnight Oats are the absolute perfect, healthy, easy fall breakfast.  Lightly sweet with a hint of spice all made in 5 minutes!

    You all know how much I adore overnight oats.  I eat them every single day.  Seriously without fail, every day.  

    I usually let them sit overnight, but if by chance I forget to make them (I usually make 4 or 5 at a time), I have been known to eat it right after making it.  

    Isn't everyone looking for a quick, healthy breakfast on the go (because most mornings I am on the go) and these overnight oats are always the answer.    I love them.  Oh and it's a total added bonus that this is packed with protein, vegan, dairy-free, gluten-free and crazy delicious.

    If you are looking for some other healthy recipes, you will love these Peanut Butter and Chocolate Chunk Overnight Oats, Apple Pie Overnight Oats, Gingerbread Chocolate Overnight Oats and definitely these Creamy Chocolate Chip Overnight Oats.

    All of these would be even more yummy with some Low Carb Bulletproof Hot Chocolate, Apple Chai Latte and definitely some Spiked Apple Cider!

    Recipe Tips

    I love to add the pepitas (pumpkin seeds) right before I eat.  They add a great crunchy texture and lots of magnesium, zinc and omega-3-fatty acids.  

    You could always add my Coconut Maple Roasted Pumpkin Seeds to add some more sweetness! Man, those are my favorite.

    I must sound like a broken record, but if you haven't tried these yet, you seriously need to.  If the cold oats don't intrigue you, simply warm them up for a little bit.

    It doesn't get any easier than these.

    Ingredients

    • 2 cups oats
    • 2 cups almond milk
    • ¼ cup chia seeds
    • 1 teaspoon 100% maple syrup
    • 1 teaspoon cinnamon
    • 1 teaspoon pumpkin spice blend of nutmeg, cinnamon, allspice
    • 1 cup pumpkin puree not pumpkin pie filling
    • 3 scoops protein powder
    • pumpkin seeds pepitas for topping

    Instructions

    • Place all of the ingredients except for pumpkin seeds in a small bowl or jar.
    • Stir well and cover.
    • Place in the refrigerator overnight.
    • Top with pumpkin seeds.
    • Eat and enjoy!

    Notes

    To store: Place in an airtight container or mason jar and store in the refrigerator for up to 7 days.

      Thank you for the recipes. It taste AWESOME!
      My first try on this recipe today. I didn't use protein powder and almond milk, and it's still taste great; as I substituted with Manuka Honey and Flaxseed to boost the flavour. I will make this delicious overnight oats for my friends very soon...

      Love me some pumpkin! I had just enough left in the freezer (I kept not being able to get through it all before it got fuzzy) to make this stuff. I even got some pepitas to throw on top, and I'm glad I did. Unfortunately, these didn't turn out so great for me. I'm starting to grow increasingly unhappy with my protein powder, RAW. I used vanilla here, but it seems like every time I use the stuff there's this dusty, almost-grainy texture and taste. I had to double the maple syrup, and even then the sweetness was very subtle. It all turned out quite dense, which I don't mind terribly, and the seeds added some much-needed texture. I'm definitely going to have to revisit this once I get a different protein powder.

      this sounds perfect. I always make my girls homemade oatmeal in the mornings. This would be a yummy flavor change that I should really try out. Love every ingredient you used!
