If you love apple pie and apple crisp, this oatmeal is the perfect, healthy breakfast for you.
I could eat this all day long. Seriously.
But I have a weird obsession with apple and cinnamon together. And what is fantastic about this is that the apples still stay crunchy even when you make this the night before.
That's the beauty of overnight oats, you don't actually cook them so the texture stays crunchy. Nothing soft and mushy in here,
Feel free to add raisins or cranberries if you'd like. Or even a nut butter or sunflower seed butter.
But I love it just the way it is.
The most important part is that these overnight oats are completely customizable to your likes (and whatever you have in your refrigerator and pantry!)
With that being said, these Apple Pie Oats will remain a favorite for me.
Ingredients
- 1 cup oats
- 1 ยฝ scoops protein powder
- 1 cup almond milk I used Silk unsweetened Vanilla Almond Milk
- 2 tablespoons chia seeds
- 1 apple chopped
- ยฝ teaspoon 100% pure maple syrup
- ยฝ teaspoon cinnamon
- 2 tablespoons chopped walnuts I used Diamond of California
Instructions
- Place all of the ingredients except for walnuts in a small bowl.
- Stir well and cover.
- Place in the refrigerator overnight.
- Top with walnuts.
- Eat and enjoy!

I love to add protein powder to make it a complete, healthy breakfast. Like I always say, you need protein at every meal and snack.
The apples add fiber (keep the skin on), the walnuts contain omega-3-fatty acids, the oats add heart-healthy fiber and the almond milk is dairy-free, low calorie and packed with calcium. Now you see why this is my favorite?
Obsessed is such a strong word...
After my first stomach surgery, it took me months to be able to eat full meals. I had no appetite (I even lost 26 pounds unintentionally) and all of my favorite foods looked incredible unappetizing.
The one I was most sad about Having zero taste or desire to eat overnight oats.
Ask any of my friends and family, I was so sad.
I truly looked forward to eating my overnight oats after a run or a bar method class and now, I just didn't want it. At all.
I know this sounds ridiculous especially after everything I had been through. But it was so difficult to find anything that I actually wanted to eat.
And this is coming from someone who LOVES food.
After about four months I started to feel more like myself and even started to eat more again. And, you guessed it, I started craving y beloved overnight oats again!
I was so happy!
I started making Mondays my meal prep days where I would make 4 or 5 at a time to have for the week. I was back in business.
I was feeling amazing and more like myself every day.
I took this as a sign of true healing.
Once I started to eat more each day and more regularly, my energy went back up and my pain was slowly disappearing.
After all of my surgeries it took about 6 months for me to be back to my normal self.

Had this today and it was quite tasty! A strange mix of textures, though, that left me a bit unsure of what to think. It's really thick, thanks in no small part to those chia seeds, but I rather liked it. I'm going to heat up tomorrow's oats and see how that goes! Lookin' forward to seein' the difference there. Just wanted to add that I used vanilla soy milk and a granny smith apple. I'll have to try these again some day with a sweeter apple to see what that does!

I agree, the texture might get some time getting used to, especially because it's cold and not hot! Try to heat it for 30 seconds or so and let me know how you like it! Thanks for stopping by!

I heated this up today and it was even better than cold! Of course, a different apple type could change that. The granny smith I used was pretty bland... I'll have to try a fuji next time. But it was amazing warm. The texture even softened up some, which was nice.
