    'Tis the season for all things pumpkin and pumpkin spice. You need to make these delicious pumpkin spice scones ASAP.  Grab a cup of coffee (or tea if you're me) and dunk one of these scones in there.  You will thank me.

    These yummy scones are perfect for busy mornings or an after school snack and they refrigerate and freeze really well too.

    Why You Should Make These Gluten Free Pumpkin Spice Scones

    These pumpkin spice scones are much healthier than the Starbucks classic scones. These are made with all wholesome ingredients including Greek yogurt, 100% maple syrup and pure pumpkin.

    These are examples of why ingredients are so important.

    I use plain full fat Greek yogurt (no added sugar and the ingredient list should only be milk, cream and live active cultures which are probiotics).

    100% maple syrup is made from maple tree sap where as the store bought varieties (that do not say 100% pure) contain corn syrup and other preservatives. Basically junk.

    This ingredient, pure pumpkin is very important because it often gets confused with pumpkin pie filling.

    I always use 100% pure pumpkin which is made from cooked and mashed pumpkin. Right next to it at the grocery store is canned pumpkin filling which is loaded with added sugar as well as spices.

    It's super easy to use pure pumpkin and add whatever spices, usually cinnamon, nutmeg and ginger on your own.

    Recipe Tips

    Don't be intimidated by making scones, these are simple to make.  They are perfect for brunch too for entertaining or for an afternoon snack.

    Don't worry, in a  couple of months everything I will make will be gingerbread and peppermint.  Kidding! (Not really)

    I like to make my scones into triangles but you can easily also drop them by the spoonful as well. I've done it both ways but still prefer them in triangles.

    You can make these with or without the glaze, I like them either way. I do think the glaze a nice extra touch.

    Ingredients

    • Scones:
    • 1½ cups gluten-free all-purpose flour
    • ¼ cup coconut flour
    • ½ teaspoon xanthan gum
    • ¼ cup unrefined sugar
    • 2 teaspoons gluten-free baking powder
    • ½ teaspoon cinnamon
    • ½ teaspoon nutmeg
    • ¼ teaspoon ginger
    • ¼ teaspoon salt
    • ½ cup coconut oil
    • 2 large eggs
    • ⅓ cup Greek yogurt
    • ¾ cup 100% pumpkin puree
    • 1 teaspoon gluten free vanilla extract
    • 1 teaspoon pure vanilla extract
    • Glaze:
    • ½ cup powdered sugar
    • 1 teaspoon cinnamon
    • 2 tablespoons 100% maple syrup
    • 1-2 tablespoons milk

    Instructions

    • Preheat the oven to 400°F. Line a baking sheet with parchment paper or use a silicone mat.
    • In a large bowl, mix together the flours, xanthan gum, sugar, baking powder, cinnamon, nutmeg, ginger and salt. Work in the coconut oil until the mixture is crumbly.
    • In a separate bowl, whisk together the eggs, Greek yogurt, pumpkin and vanilla until frothy. Add to the dry ingredients, stirring until well blended. The dough will be sticky.
    • Drop the dough onto the parchment paper or silicone mat and form into a circle in the center of baking sheet. Cut circle into 8 triangles.
    • Sprinkle the scones with extra sugar if desired. Bake for 15–20 minutes, or until golden brown.
    • Prepare the glaze by mixing all the ingredients together in a small bowl until combined. Remove scones from the oven and let cool for at least 5 minutes before drizzling glaze on top.

    Notes

    To store in the refrigerator: Place cooled scones in an airtight container in the refrigerator for up to 5 days.
    To store in the freezer: Place cooled scones in an airtight container the freezer for up to 3 months.
