This One Pot Sweet Potato Quinoa Skillet is so nutritious and delicious. I love a hearty, healthy dish that can easily be prepared in one pot that is ready in under 30 minutes!

Halloween is over.  It was a great day here in the Kelly house, but boy am I exhausted.

All 3 of my little guys want to be in different places and I am left trying to coordinate everything.  So as fun as it is (and I kept reminding myself to look at it through their excited little eyes), I am happy it's over.

Maybe I am just getting old and crotchety but it's one long day.

So now it's all about Thanksgiving.   And side dishes.  Lots and lots of delectable side dishes.

I'd say this could be a holiday side dish, but since there are quinoa and beans in here, this would also qualify as a nutritious, meatless main dish.

Shout out to my vegans out there! Heeeeeeey!

If you are looking for some more healthy quinoa recipes, you will love this Green Bean Quinoa Casserole, Sweet Potato Brussels Sprouts Quinoa Bowls, Spinach Artichoke Quinoa Bites and this Spiralized Beet Quinoa Salad!

These would all be even more delicious with a Mojito Spritzer, Cranberry Mojito and definitely this Spiked Apple Cider!

Looking for something non-alcoholic? All of these would be even more yummy with some Low Carb Bulletproof Hot Chocolate, Apple Chai Latte and this Eggnog Latte!

Also, my cookbooks are both on sale now and would make a great gift! The Everything Wheat Free Diet Cookbook and The Greek Yogurt Cookbook are both the lowest prices I have seen!

Why You Should Make This One Pot Sweet Potato Quinoa Skillet

With the holidays coming up, I am all about making life easier.  This recipe calls for one dish and that's it.  Super easy and less clean up!  We are busy enough around the holidays so I appreciate any free time I can get.

I am always looking for easy, healthy recipes that I can whip up on a weeknight, especially ones that only use on e pan.

You can easily customize this recipe to your liking and to what you have in the house. Substitute butternut squash for sweet potato, spinach or arugula for the kale or black beans instead of white beans.

This recipe is so customizable, you just need to get creative.

Ideas of Additions to This One Pot Sweet Potato Quinoa Skillet

    • Rotisserie chicken or grilled chicken
    • Chopped grilled steak
    • Tuna fish
    • More beans! Add some black beans for added plant based protein and fiber.

Hi Megan! Yes kale at the end. I would use a big skillet to hold everything. I used a 5 qt sauce pan. I hope you like it!

I freeze just about EVERYTHING Brandi, but I have never had leftovers of this to freeze 🙂 Let me know if you freeze it and how it comes out!

This looks like such a healthy and satisfying recipe... definitely the kind of thing I need on my menu to counteract all the fatty, buttery, sugary treats that show up around this time of year! We've already had Thanksgiving up here in Canada, but I'm thinking I might just celebrate again for the heck of it. 🙂

This is a perfect side dish to lighten up the Thanksgiving table. I can't even with my friends that have finished Christmas shopping already.

Haha - well, think I'm looking at the cure for old and crotchety! This dish sounds wonderful - I love kale sauteed in dishes and yuppers - this would be a wonderful holiday side dish AND a nutritious, meatless main dish any night!

This has tons of flavors I love in it. I need some easy recipes too. Besides all the holidays, all 5 of us have birthdays in Nov & December, so life gets pretty hectic. Quick and easy are the way to go!
