Halloween is over. It was a great day here in the Kelly house, but boy am I exhausted.
All 3 of my little guys want to be in different places and I am left trying to coordinate everything. So as fun as it is (and I kept reminding myself to look at it through their excited little eyes), I am happy it's over.
Maybe I am just getting old and crotchety but it's one long day.
So now it's all about Thanksgiving. And side dishes. Lots and lots of delectable side dishes.
I'd say this could be a holiday side dish, but since there are quinoa and beans in here, this would also qualify as a nutritious, meatless main dish.

With the holidays coming up, I am all about making life easier. This recipe calls for one dish and that's it. Super easy and less clean up! We are busy enough around the holidays so I appreciate any free time I can get.
I am always looking for easy, healthy recipes that I can whip up on a weeknight, especially ones that only use on e pan.
You can easily customize this recipe to your liking and to what you have in the house. Substitute butternut squash for sweet potato, spinach or arugula for the kale or black beans instead of white beans.
This recipe is so customizable, you just need to get creative.
Ideas of Additions to This One Pot Sweet Potato Quinoa Skillet
- Rotisserie chicken or grilled chicken
- Chopped grilled steak
- Tuna fish
- More beans! Add some black beans for added plant based protein and fiber.

Sweet Potato Kale Quinoa Skillet
Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 small onion chopped
- ½ teaspoon salt
- 1 tablespoon fresh sage
- 15 ounces small white beans rinsed and drained
- 2 pounds sweet potatoes peeled and cut into cubes
- 16 ounces kale
- 1 ½ cup vegetable broth
- 1 cup quinoa
Instructions
- Heat oil, garlic and onion in a large skillet over medium heat.
- Cook for 2-3 minutes until onions are translucent.
- Stir in sweet potatoes,salt and sage. Cook for about 5 minutes.
- Add beans, broth and quinoa. Bring to a boil.
- Cover and reduce heat to low.
- Cook for 15-20 minutes until liquid is gone.
- Add kale and still until wilted.

What kind of skillet/pan worked best? i went through three and couldn't determine the best? Also, kale at the end?

Hi Megan! Yes kale at the end. I would use a big skillet to hold everything. I used a 5 qt sauce pan. I hope you like it!

I freeze just about EVERYTHING Brandi, but I have never had leftovers of this to freeze 🙂 Let me know if you freeze it and how it comes out!
