I can't stop making these oats. I love trying new recipes and flavors out and sharing them with you. These are so versatile and I love the fact that they only take minutes to prepare.
I usually make 4 or 5 at a time to make my life easier in the mornings. And on the mornings that I go for a run I eat them AFTER my run so I have something to look forward to.

Why You Should Make These Chocolate Chip Overnight Oats
So why do I love these oats so much? Let's put aside the fast that they are insanely delicious and I love the texture.
But they are also super healthy too! They are packed with protein and fiber that help keep you full, and they are gluten-free, dairy-free and vegan too (for all of my allergy friends).
If you haven't already, try them! I bet you love them as much as I do.
And if you don't like the fact that your oats are cold (you literally take them out of the refrigerator and eat them!) then simply warm them up for a few minutes. Then come back and thank me 🙂
Recipe Tips and Ideas
I am not a fan of coconut so I didn't add the optional shredded coconut topping. I love coconut cream since it's vegan and has a wonderful, creamy texture, I just don't love a strong coconut taste.
But by all means, add your shredded coconut! Just try to get the unsweetened kind. I think there is plenty of sweetness with the maple syrup and chocolate chips (of course!)
I use the sugar free chocolate chips that are sweetened with stevia. They taste just as good and they are a great way to lower the sugar.

Creamy Chocolate Chip Overnight Oats
Ingredients
- ⅓ cup gluten-free rolled oats
- ⅓ cup almond milk or coconut milk
- 2 tablespoons coconut cream
- 1 scoop vegan protein powder
- 1-2 tablespoons chia seeds
- 1 teaspoon 100% pure maple syrup
- 1 tablespoon chocolate chips
- unsweetened shredded coconut for topping
Instructions
- Place all of the ingredients in a mason jar or an airtight container with a lid. Stir well.
- Cover and refrigerate for at least an hour or overnight.
- Top with extra chia seeds and chocolate chips if desired.
- * I took out half of the oats, added some chocolate chips to the middle and layered remaining oats on top.

After some issues with baked oatmeal, I've returned to overnight oats. I felt a little ambitious and adventurous so I set this up as one of the recipes I'd do this week. Serendipitously, I found that whole fat coconut milk was on sale when I went to stock up! I wasn't sure how much cream would be in each can, so I bought 4... If nothing else, I'd have some for other stuff, right? lol (I've never worked with just the coconut cream before.) So anyway, I finally made 4 servings of this last night. I had NO IDEA there was so much cream in one can! I just kept digging... and digging... and it seemed like it would never end! Turns out over half the can is cream. A valuable lesson for someone aiming at dairy-free cooking/baking. So I used almond milk, vegan vanilla protein powder, and decided I'd see how it went with just 1 T of chia seeds. The oats were kinda hard to mix. They were really think and there were chunks of coconut cream that I kept having to mash and smear around to break down. lol As I have no experience with coconut cream, I was a little concerned that this would taste like coconut (a taste I'm not big on), but I hoped the protein powder and maple would work together to drown it out. So I ate the first one for breakfast this morning and... wow. I've never had a thicker oatmeal. lol It was like clay. I'm glad I didn't go with the 2 T of chia seeds or else I could've put the oats to work as construction material! lol It has a strange melt-in-your-mouth texture that I've never experienced before, likely due to that coconut cream. I'm glad there were chocolate chips in there to break up the texture, 'cause as a texture fiend I'm not sure I could've stomached the entire serving without 'em. I'm torn as to whether I'd want to add more almond milk to loosen up the goop a bit... However, my boyfriend (still fairly new to overnight oats) has deemed these his favorite so far! He says they're like fudge, something he can't normally have due to the dairy. And here I was concerned about what to do with the rest of that coconut cream! I plan on mass-producing more of this. 😀 Thanks so much for the recipe!

Where do you get coconut cream? Or is it something you make? My daughter has a dairy allergy, so I've made lots of things with coconut milk, but I'm not familiar with this product.

Hi Alyssa! I bought mine at Trader Joe's. You can leave it out if you can't find it but it does add a nice creamy texture!
