This Cranberry Apple Granola Bar recipe is the perfect healthy snack! Super easy to make, loaded with fiber and less than 150 calories.

What a name, huh? I had to add "granola" in the name b/c of the healthy ingredients, but they definitely are like cookies too. These turned out so delicious!
I am always looking for new healthy snacks and treats to make for my kids for their lunch boxes and after school. Of course they want the junky ones with all of the extra additives so I have to make sure the homemade ones are just as delicious, without all the junk.

Why You Should Make This Granola Bar Recipe
They were a little dry from the oats (that's how I like them). The dried fruit and the honey definitely gave it some moisture too. They are loaded with fiber from the oats, wheat germ and flax seed.
When you cut each bar in half (24 servings) they are only ~150 calories each. It is the perfectly portioned size for dessert or whenever you feel like splurging on taste and not calories.
I make these on my meal prep days and freeze some for later. I freeze them individually so I can just take it out to defrost when I feel like a sweet treat.

Cranberry Apple Cookie Granola Bars
Ingredients
- 3 cups rolled oats
- โ cup almonds sliced
- ยพ cup ground flax seed
- ยพ cup wheat germ
- ยฝ cup shredded coconut unsweetened
- 2 ounces dried cranberries unsweetened
- 2 ounces dried apples unsweetened
- 1 teaspoon cinnamon
- 1ยผ cups 100% maple syrup or honey
- 1 teaspoon pure vanilla extract
- โ teaspoon salt
Instructions
- Preheat oven to 350 degrees F.
- Mix oats, almonds, flax, bran, coconut and salt on a baking pan and roast for 15 minutes, stirring occasionally.
- Place maple syrup and vanilla in pot under low heat, stirring to smooth.
- Remove dry ingredients and pour into a bowl.
- Lower the temperature of oven to 300 degrees.
- Grease 9 x13 glass dish with cooking spray.
- Mix liquid into bowl with dry ingredients, add cranberries or whatever else you want.
- Pour into dish and spread out evenly. ย Use rubber spatula to press down evenly.
- Bake at 300 for 35-40 minutes, until golden brown.
- Let cool for at least 1-2 hours in the refrigerator to harden.
