Cranberry Apple Cookie Granola Bars

Ingredients

  • 3 cups rolled oats
  • cup almonds sliced
  • ¾ cup ground flax seed
  • ¾ cup wheat germ
  • ½ cup shredded coconut unsweetened
  • 2 ounces dried cranberries unsweetened
  • 2 ounces dried apples unsweetened
  • 1 teaspoon cinnamon
  • cups 100% maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • teaspoon salt

Instructions

  • Preheat oven to 350 degrees F.
  • Mix oats, almonds, flax, bran, coconut and salt on a baking pan and roast for 15 minutes, stirring occasionally.
  • Place maple syrup and vanilla in pot under low heat, stirring to smooth.
  • Remove dry ingredients and pour into a bowl.
  • Lower the temperature of oven to 300 degrees.
  • Grease 9 x13 glass dish with cooking spray.
  • Mix liquid into bowl with dry ingredients, add cranberries or whatever else you want.
  • Pour into dish and spread out evenly.  Use rubber spatula to press down evenly.
  • Bake at 300 for 35-40 minutes, until golden brown.
  • Let cool for at least 1-2 hours in the refrigerator to harden.

Notes

To store in the refrigerator: Place in an airtight container for up to 7-10 days.
To store at room temperature: Place in an airtight container for up to 5 days.
To store in the freezer: Place in an airtight container for up to 3 months.
