I was compensated by Minute® Rice to create this recipe. However, like always, the opinions are entirely my own. Promise 🙂

I usually get bored really quick with the salads that I make at home. I typically keep making the same ones over and over with the same ingredients.

The best way to get me out of my salad rut is to think outside the box, which led me to create this incredible dish. A friend of mine served a yummy brown rice salad at a party which inspired me to create this.

Make ahead salads that I can keep I the refrigerator and have my luck or dinner ready for the week are always a huge time saver. I usually meal prep on Sundays which saves time and keeps me on track.

Why You Should Make This Brown Rice Salad

I only like a few cheeses with Feta being first on my list. Soft cheese is not my favorite at all, so I will always choose harder cheeses first.

Using cheese (in small amounts) is a great way to add a bunch of flavor and still keeping it healthy.  Again, let's emphasize the words "small amounts".  I know many people can overdo it with cheese.

The weather is finally getting warmer and it's time to start lighting up our dishes (if you haven't already!)  I love using Minute® Brown Rice because it's ready in just 10 minutes and it's healthy.

It's one of those staples that should always be in your pantry at all times. So many salads are made with pasta and are loaded with high calorie dressings, but this one is bursting with flavor (hello roasted tomatoes!) and it's loaded with vegetables.

    Recipe Tips

This salad can be served and enjoyed either cold or warm. Personally, I love it cold and just eat it right out of the refrigerator. Go ahead and eat it however you'd like.

I have made this so many times, it is extremely versatile. One time I used roasted red peppers instead of tomatoes and it was divine.

I have also added cooked grilled chicken to this brown rice salad and loved it. You can even use shredded rotisserie chicken to save time.
