Refreshing, light and flavorful, this salad is perfect for summer entertaining!

Watermelon Feta Salad with Mint Balsamic Dressing @peapoddelivers

This is a really delicious recipe.  Like I-am-borderline-obsessed-with-it-and-make-it-weekly-delicious-recipe.

Now let’s get started.

I can’t believe that summer is half way over already.  I love that we don’t have a structured routine in the summer (besides all of these baseball games) but it can be difficult to be productive with the kids home.  Don’t get me wrong, I am not ready for homework and after school activities yet, I am  simply looking for ways to make life a little easier.

One thing I don’t have time to do?  Go to the grocery store up to 4 times a week with my 3 little friends.  I am not sure if this is a food blogger problem or everyone frequents grocery stores that frequently, but I do.  I make my lists for the recipes I am going to prepare and inevitably I always forget something.  It’s easy to run to the store when your kids are in school but not so much when they are home.  All.  The Time. That’s until I found Peapod.com!

The beauty of Peapod.com is I can order my groceries in my pj’s, at midnight, on my laptop and they can be delivered to my house the next day.  I will take that over bringing my 3 kids to the grocery store any day of the week!    To make life even easier, each week it saves your shopping list from the prior weeks so you can simply reorder all of your staples! You know, you always want the same yogurts that your kids like and the almond milk that you like every week.  Now that’s what you call simplifying your life.

My favorite part of Peapod.com is the section called “Peapod Local Farm Box” where you can take advantage of local produce.  You not only get the advantage of more nutritious fruits and vegetables (they aren’t sitting on a truck going across country losing nutrients) as well as supporting your local farmers.  That is such a great feature!

Now, let’s gush a bit about this salad.  Guess what? I bought all of these ingredients over at Peapod.com.

You know what’s my second favorite combination of foods?  Watermelon and Feta cheese.  Oh come on, you know peanut butter and chocolate will always be my first favorite.  The sweetness of the watermelon and slight saltiness of the feta makes a winning combination.  Add the rest of the ingredients in this salad and it’s a total game changer.

Watermelon Feta Salad

Course Salad
Servings 6 servings

Ingredients

  • Salad:
  • 4 cups spinach
  • 1/2 cup grape tomatoes halved
  • 1/4 cup feta cheese crumbled
  • 2 cups chopped watermelon
  • 1/2 cup quinoa
  • 1/4 walnut halves
  • 2 tablespoon fresh mint chopped
  • Dressing:
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 clove garlic minced
  • 2 tablespoons fresh mint chopped

Instructions

  1. Rinse quinoa in fine mesh sieve.
  2. Transfer to medium sized pot and add 2 cups of water.
  3. Bring to a boil, cover and reduce heat to low and simmer for 15-20 minutes until all the water is absorbed. Set aside.
  4. Prepare dressing by adding all of the ingredients in a medium sized bowl and mix thoroughly until combined.
  5. You can also place ingredients in a small jar and shake well.
  6. Place remaining ingredients for salad in a large bowl, including the cooked quinoa. Toss well.
  7. Either add dressing and toss salad again or keep dressing on the side.

    This is such a fun salad combination! I love the watermelon mixed in with the feta! Also, Peapod is the best. When I lived in Chicago right after having my first child it was a lifesaver!

    Peanut butter and chocolate is my all-time favorite combo. I haven’t had watermelon and feta together but I love feta and I love watermelon and I think the sweetness of the watermelon and the savory feta would be perfect together. Great salad, Lauren!
