This watermelon feta salad is a really delicious recipe. I am always looking for ways to make life a little easier and this is easy to make, healthy and yummy.
It's crazy to think that summer is half way over already. I love that we don't have a structured routine in the summer (besides all of these baseball games) but it can be difficult to be productive with the kids home.
One thing I don't have time to do? Go to the grocery store up to 4 times a week with my 3 little friends. I am not sure if this is a food blogger problem or everyone frequents grocery stores that frequently, but I do.
I make my lists for the recipes I am going to prepare and inevitably I always forget something. It's easy to run to the store when your kids are in school but not so much when they are home.

Oh come on, you know peanut butter and chocolate will always be my first favorite. The sweetness of the watermelon and slight saltiness of the feta makes a winning combination.

Watermelon Feta Salad
Ingredients
- Salad:
- 4 cups spinach
- ½ cup grape tomatoes halved
- ¼ cup feta cheese crumbled
- 2 cups chopped watermelon
- ½ cup quinoa
- ¼ walnut halves
- 2 tablespoon fresh mint chopped
- Dressing:
- ¼ cup balsamic vinegar
- ¼ cup olive oil
- 1 tablespoon honey
- 1 clove garlic minced
- 2 tablespoons fresh mint chopped
Instructions
- Rinse quinoa in fine mesh sieve.
- Transfer to medium sized pot and add 2 cups of water.
- Bring to a boil, cover and reduce heat to low and simmer for 15-20 minutes until all the water is absorbed. Set aside.
- Prepare dressing by adding all of the ingredients in a medium sized bowl and mix thoroughly until combined.
- You can also place ingredients in a small jar and shake well.
- Place remaining ingredients for salad in a large bowl, including the cooked quinoa. Toss well.
- Either add dressing and toss salad again or keep dressing on the side.
