These Maple Coconut Pistachios with Hemp Seeds are the perfect slightly sweet and salty snack that is healthy and packed with protein!
Raise your hand if you love anything that’s sweet and salty?
I know I can’t be alone here.
Think dark chocolate with sea salt, salted caramel, peanut butter and jelly, kettle corn and now… pistachios and maple syrup!
I did a post a few months ago on pistachios and how they were my new favorite snack. I love them so much that I decided to take it up a notch and make them even more delicious!
These are simple to make, which is great these days since I seem to barely have time to do anything.
And when I don’t have healthy snacks readily available, I tend to eat mindlessly. That’s not always healthy stuff either.
With three young children, I tend to want to snack on the rest of their lunches and snacks. Think sandwich crusts, leftover applesauce and granola bar crumbs.
Ah, the magical, glamorous life of a mom.
Just keeping it real here. Yet again.
I try my hardest to meal prep, plan out my recipes and organize my meals but when your kids are young, there aren’t enough hours in the day.
I’ll get there and one day I will prep everything… yes, even my snacks like these pistachios!
Just so you know, the maple syrup on these babies end up caramelizing and turning dark brown but they are not burnt. My kids loved these too.
Well, at least 2 of them did. The other one didn’t want to be bothered with taking them out of the shell and wanted to me to do it EVERY time!
Can you imagine? At least he made me laugh.
And he also kept telling me these looked gross and burnt.
Well, it’s his loss.
And more for me.
Why are some kids so picky? Note: this is the same kid that doesn’t like chunky tomatoes and will take 20 minutes to pick every last one out of his delicious, homemade spaghetti sauce.
Sigh…
Maybe I should just cave and give him the velvety smooth store-bought jarred sauce? He would probably be happy.
Now come see how simple they are to make!
Just a few simple, wholesome ingredients and these babies are yours. I am constantly looking for new ideas for healthy snacks too.
I get bored after a while of snacking on the same boring things and it’s always good to mix things up.
Added bonus points for being vegan, gluten free and dairy free.
Shout out all of my allergy friends!
These are for you. And for the others that are looking for something crunchy to snack on.
