    Maple Coconut Pistachios with Hemp Seeds

    This Maple Coconut Pistachio recipe is the perfect slightly sweet and salty snack that is healthy and packed with protein! These Maple Coconut Pistachios are vegan, gluten free, dairy free and so easy to make.

    Raise your hand if you love anything that's sweet and salty? I know I can't be alone here.

    Think dark chocolate with sea salt, salted caramel, peanut butter and jelly, kettle corn and now... pistachios and maple syrup!

    I did a post a few months ago on pistachios and how they were my new favorite snack.  I love them so much that I decided to take it up a notch and make them even more delicious!  

    These are simple to make, which is great these days since I seem to barely have time to do anything.  And when I don't have healthy snacks readily available, I tend to eat mindlessly.  That's not always healthy stuff either.

    With three young children, I tend to want to snack on the rest of their lunches and snacks. Think sandwich crusts, leftover applesauce and granola bar crumbs.

    I try my hardest to meal prep, plan out my recipes  and organize my meals but when your kids are young, there aren't enough hours in the day.

    I'll get there and one day I will prep everything... yes, even my snacks like these pistachios!

    Why You Should Make This Maple Coconut Pistachio Recipe

    Just so you know, the maple syrup on these babies end up caramelizing and turning dark brown but they are not burnt.  My kids loved these too.  

    This pistachio recipe is so simple to make. Just a few simple, wholesome ingredients and these babies are yours. I am constantly looking for new ideas for healthy snacks too.

    I get bored after a while of snacking on the same boring things and it's always good to mix things up. Added bonus points for being vegan, gluten free and dairy free.

    These are for you. And for the others that are looking for something crunchy to snack on.

    Ingredients

    • 1 tablespoon coconut oil
    • 1 tablespoon 100% maple syrup or sugar free alternative for low carb option
    • ½ teaspoon cinnamon
    • 1 cup in-shell pistachios
    • 2 tablespoons hemp seeds

    Instructions

    • Preheat oven to 350 degrees.
    • Line a baking sheet with parchment paper.
    • Mix all of the ingredients except the hemp seeds together in a medium bowl.
    • Bake in preheated oven for 15 minutes, making sure to stir after 10 minutes.
    • *Note: check the pistachios after 10 minutes to prevent them from burning. Every oven is different.
    • Sprinkle hemp seeds on top of pistachios immediately after you remove from oven.
    • Allow to cool before eating.

    Notes

    To store: place in an airtight container for up to 7 days. It will last even longer if you refrigerate them.
