This Salted Pecan Dark Chocolate Bark is not only simple to make and delicious, but it’s also low carb, keto, vegan and gluten free!

I am so crazy excited for the holidays this year! I mean, I always love this time of year but this is the first one in our new house and I can’t wait.
We still have a ton of renovations to do, but for now I am just thrilled to be here to celebrate.
I mean, I am not looking forward to living through all of those renovations, I am just looking at the bigger picture and keeping my eye on the prize. It’s not easy…
One of my favorite things to do this year is to plan out all of the goodies I am baking to give to friends and family as gifts. Besides my typical Christmas cookies that I make every year, I will also add my Gluten Free Butter Pecan Cookies, my classic Christmas Chocolate Chip Cookies and now this Salted Pecan Dark Chocolate Bark!
Who doesn’t love homemade goodies?
I’d take a homemade gift over a mug or candle any day. Just saying…
Keeping it real here, I wish I had all of this time to bake all of these treats. My kids are involved in so many sports and activities, work is so busy (which is always a good thing) and then there’s all of the work I have to do at home.
WHY IS THERE ALWAYS SO MUCH LAUNDRY?
There’s just never enough time to do everything you want around the holidays. Unless you wake up at 5 am and stay up until midnight.
That’s not happening. Mama needs her sleep!
Ok, back to this sweet treat…
With all of the treats that we have in our houses, offices and basically ALL over this time of year, I try to make healthier options so that I can also indulge. Deprivation is not a good idea EVER, especially during the holidays.
I am always prepared with some type of low carb sweet treat in my refrigerator or even freezer so that I am not tempted to eat any of the non-low carb foods that are all around me.
As many of you know I have been eating low carb lately and I feel great. I am hoping it will help with my intestinal condition by eating lots of healthy fats and watching my carbohydrate intake.
I started off eating low carb and high fat in order to prevent an intestinal blockage from happening again, but I also have gained a ton of energy and I just feel great.
I am eating lots of fresh vegetables and moderate amounts of protein (which isn’t too different than what I normally eat) but I am really focusing on adding lots of healthy fats to my daily routine.
The best part of a low carb diet is that you don’t feel deprived. Well, that is, if you follow it correctly.
If you want a treat, then go for it. Just make a low carb one. Just like this bark.
You catch my drift?
This bark is gluten free, grain free, low carb, sugar free and super easy to make. You can even prepare it within 20 minutes, pop it in the freezer and break it up hours later.
I love anything that simplifies my life!
I used Lily’s sugar free chocolate chips to make this delicious bark. If you aren’t sugar free or low carb, then you can use whatever chocolate you’d like.
You can also use whatever nuts you’d like too. I’ve made them with almonds, sliced cashews and macadamia nuts!
Oh man, they were SOOOO DELICIOUS!
You can also use butter if you don’t have coconut oil in your house. Obviously if wouldn’t be vegan anymore if that is important to you, but it would still taste creamy and delicious.
I promise!
I also used Now Foods Raw Pecans (which I always have in my pantry). They not only make the perfect, easy, healthy, low carb snack straight out of the bag, but they are perfect so many of your holiday treats!
I also like to offer it as a healthy snack at my holiday table as well. I mean, who doesn’t love to snack on raw nuts with a glass of wine?
I always keep Now Foods nuts, seeds and snacks at home and even in my car for a quick, healthy snack. I try to always be prepared.
And to be honest, that is my biggest piece of advice for maintaining clean, healthy lifestyle… you must be prepared!
Now let’s talk pecans…anyone else LOVE them as much as me? Don’t think I didn’t notice that the last three posts on my blogs all had pecans in there.
Gluten Free Butter Pecan Cookies

Let’s be honest, can we really ever have too many pecan recipes? I think not.
Don’t worry, I don’t discriminate. I love all nuts over here.
They are convenient, loaded with healthy fats and protein, and extremely versatile.
Just be careful though, if you are anything like me, you can over-indulge. It’s so easy to do.
They are calorie dense, so remember a little goes a long way.
But man, they are sooooo good.

Low Carb Salted Pecan Dark Chocolate Bark
Ingredients
- 9 ounces sugar free chocolate chips
- 1 tablespoon coconut oil
- 1 cup Now Foods Raw Pecans
- coarse salt
Instructions

Melt the chocolate chips and coconut oil using a double boiler or directly in a saucepan over a medium heat, making sure to stir constantly.

Add pecans and mix well.

Line baking tray with parchment paper. Pour chocolate- pecan mixture onto parchment and spread evenly.

Sprinkle with salt and place in the freezer for at least a half hour to harden.

Break into pieces. Store in the refrigerator or freezer.
