I am so crazy excited for the holidays this year! I mean, I always love this time of year but this is the first one in our new house and I can't wait.
We still have a ton of renovations to do, but for now I am just thrilled to be here to celebrate.

One of my favorite things to do this year is to plan out all of the goodies I am baking to give to friends and family as gifts. Besides my typical Christmas cookies that I make every year, I will also add my Gluten Free Butter Pecan Cookies, my classic Christmas Chocolate Chip Cookies and now this Salted Pecan Dark Chocolate Bark!
All of these would be even more yummy with some Low Carb Bulletproof Hot Chocolate, Apple Chai Latte, Eggnog Latte and definitely some Spiked Apple Cider.

Why You Should Make This Salted Pecan Chocolate Bark
As many of you know I have been eating low carb lately and I feel great. Hopefully it will help with my intestinal condition by eating lots of healthy fats and watching my carbohydrate intake.
At first, I started off eating low carb and high fat in order to prevent an intestinal blockage from happening again, but I also have gained a ton of energy and I just feel great.
My diet consists of lots of fresh vegetables and moderate amounts of protein (which isn't too different than what I normally eat) but I am really focusing on adding lots of healthy fats to my daily routine.
The best part of a low carb diet is that you don't feel deprived. Well, that is, if you follow it correctly.
If you want a treat, then go for it. Just make a low carb one, like this salted pecan chocolate bark.
With all of the treats that we have in our houses, offices and basically ALL over this time of year, I try to make healthier options so that I can also indulge. Deprivation is not a good idea EVER, especially during the holidays.
I am always prepared with some type of low carb sweet treat in my refrigerator or even freezer so that I am not tempted to eat any of the non-low carb foods that are all around me.
This bark is gluten free, grain free, low carb, sugar free and super easy to make. You can even prepare it within 20 minutes, pop it in the freezer and break it up hours later.
I love anything that simplifies my life! This chocolate bark is so ridiculously easy to make, the hardest part is waiting for it to harden!
Recipe Ingredients
- Sugar free chocolate chips - Lily's chocolate chips are always my first choice to use in my sugar free treats and desserts. If you aren't sugar free or low carb, then you can use whatever chocolate you'd like.
- Coconut oil - I use refined coconut oil which has very little coconut taste (Yes, I know it's not a popular opinion but I don't like the taste of coconut!) The only issue is that refined coconut oil has less antioxidants and vitamins than the virgin coconut oil (as well as a higher smoke points which is good to remember for baked goods) so if you like the taste of coconut, then you can easily use virgin coconut oil. You can also use butter if you don't have coconut oil in your house. Obviously if wouldn't be vegan anymore if that is important to you, but it would still taste creamy and delicious.
- Pecans - I like to use the already chopped pecans to make life easier. They are delicious to snack on and use for all of your holiday baking. You can also use whatever nuts you'd like too. I've made them with almonds, sliced cashews and macadamia nuts!
How To Make This Salted Pecan Chocolate Bark
- Melt the chocolate chips and coconut oil in a small saucepan, stirring continuously. Add pecans and mix well.
- Line a baking tray with parchment paper and pour chocolate pecan mixture onto parchment and spread evenly.
- Sprinkle with salt and place in the freezer for at least a half hour to harden.
- Break into pieces and enjoy! I told you it was so easy to make.

Low Carb Salted Pecan Dark Chocolate Bark
Ingredients
- 9 ounces sugar free chocolate chips
- 1 tablespoon coconut oil
- 1 cup Now Foods Raw Pecans
- coarse salt
Instructions
- Melt the chocolate chips and coconut oil using a double boiler or directly in a saucepan over a medium heat, making sure to stir constantly.
- Add pecans and mix well.
- Line baking tray with parchment paper. Pour chocolate- pecan mixture onto parchment and spread evenly.
- Sprinkle with salt and place in the freezer for at least a half hour to harden.
- Break into pieces. Store in the refrigerator or freezer.
