And honestly people who do not normally eat a gluten free diet still love these cookies. You can not taste the difference at all.

Why You Should Make These Gluten Free Butter Pecan Cookies
These delicious butter pecan cookies are so simple to make, and more importantly are made with all whole, easy to find ingredients. There are only 6 ingredients in these cookies and like I always say, the simpler the better.
They are perfect to bring to a party or gathering for all of my gluten free friends. I promise everyone loves them, not just those that follow a gluten free diet!
After writing my cookbook, The Everything Wheat Free Diet Cookbook I realize just how difficult gluten free baking can be. Well not any more. This recipe is fool proof.
Homemade baked goods are the perfect present to say so many different things. Whether someone is celebrating a new baby, a new job or going through a difficult time, sharing homemade goodies are a great way to express those emotions.
Recipe Ingredients
- Butter - I always use 100% grass fed, organic unsalted butter which just plain old tastes better!
- Unrefined brown sugar - I used this one that is a brown sugar substitute (if you are looking to cut back in sugar) or this one is an unrefined brown sugar. Both work great in these butter pecan cookies.
- Egg - I like to use cage free, organic eggs for extra nutrients.
- Bob's Red Mill 1:1 Gluten Free Baking Flour - This is great for all of your gluten free baked goods.
- Ground flax - This adds lots of heart-healthy fiber to your baked goods.
- Vanilla extract - I use pure vanilla extract which doesn’t contain any artificial flavors or additives, it’s just pure vanilla made from alcohol. I use this one.
- Cinnamon - My favorite spice to bake with. Cinnamon is so versatile and adds a wonderful flair.
- Pecans - I used raw pecan halves for these babies and they were perfect for topping.
How To Make These Gluten Free Butter Pecan Cookies
- Mix together the butter, brown sugar and egg.
- Add flour a little at a time and mix well.
- Add the flax, salt, vanilla and cinnamon and mix.
- Place in the refrigerator for at least an hour.
- With a tablespoon, scoop cookie dough and roll into a ball with your hands.
- Flatten with your fingers and sprinkle with unrefined sugar.
- Place a pecan in the center of the cookie.
- Bake for 10-15 minutes! So easy.
Recipe FAQ's and Expert Tips
Just by making smaller cookies they tend to stay together more. Also, gluten free flour is also heavier and absorbs more moisture than traditional flours so you might need to add a bit of liquid. Typically I start with 1 teaspoon of water at a time.
Absolutely! These cookies freeze really well as long as they are store properly. I place them in an airtight container and freeze them for up to 3 months. I just defrost by letting them sit on the counter for 15-20 minutes.
Yes! You can use whatever nuts you have in your house!

Gluten Free Butter Pecan Cookies
Ingredients
- ½ cup butter softened
- ½ cup unrefined brown sugar
- 1 egg
- 1 ¼ cup Bob's Red Mill 1:1 Gluten Free Baking Flour
- ¼ cup ground flax
- ⅛ teaspoon salt
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- pecans for topping
- unrefined sugar for dusting tops of cookies
Instructions
- Mix together the butter, brown sugar and egg until well blended.
- Add flour a little at a time and mix well.
- Add the flax, salt, vanilla and cinnamon and mix until completely combined.
- Place in the refrigerator for at least an hour or even overnight.
- Preheat oven to 375 degrees F.
- With a tablespoon, scoop cookie dough and roll into a ball with your hands.
- Flatten with your fingers and sprinkle with unrefined sugar.
- Place a pecan in the center of the cookie.
- Bake for 10-15 minutes until the edges are golden brown.
