    No Bake Strawberry Almond Butter Yogurt Bites {3 Ingredients, Dairy Free}

    I don't know about you, but I dislike turning my oven on in the summer. Now don't get me wrong, that doesn't mean I don't something sweet everything now and then, it simply means it's too hot outside to turn on the oven!

    Just recently I went to a cocktail party that had amazing hor-duerves and bite sized desserts.  Everyone was raving about these Peanut Butter & Jelly Cream Cheese Phyllo Bites they had there.  Being that I despise cream cheese, I didn't even try them. I have regretted it ever since.

    I decided to come home and create my own version of those little bites that were the talk of the party. I am SO glad that I did!

    I decided to use Silk Strawberry Yogurt Alternative instead of the cream cheese.  They have similar textures and I already know that Silk Yogurt Alternative is super creamy so I gave it a shot. I added almond butter instead of peanut butter and mixed them together.  Let's just say I could have easily eaten the entire Silk/almond butter mixture all on my own, it was THAT good.  But I bet the crunchy phyllo cups would give it a wonderful texture too.  Boy was I right.

    Seriously guys, that's it.  That's the recipe in it's entirety.  Super duper easy and all types of delicious.  Oh, and I added cacao nibs to also add some extra crunch.

    I told you they were easy!

    There is no baking or cooking involved at all.  That gives us more time to plant flowers, play outside and swim in the pool. Gosh I love the easy breezy days of summer, don't you?

    Strawberry Almond Butter Yogurt Bites

    Ingredients

    • 1 cup of Silk Strawberry Yogurt Alternative
    • ¼ cup Almond Butter
    • 15 Phyllo Cups
    • cacao nibs for topping optional or whatever toppings you'd like

    Instructions

    • In a small bowl, mix the Strawberry Silk Yogurt Alternative and almond butter together until combined and fluffy.
    • Scoop mixture into phyllo cups. Top with whatever toppings you'd like.
    • Serve immediately or refrigerate until ready to serve.

      My kids love these!! They seriously eat yogurt everyday & this has more flavor, are more filling, & so good!
