Meal prep is so important and I have been doing it so long, I realize it's the only way to keep me on track.
One of the biggest thing I struggle with is being able to get a healthy breakfast on the table during the week. My kids are in 3 different schools and my mornings are hectic.
I'd love to say I was whipping up vegetable omelets for my kids every morning but that would be very far from the truth. I now realize that if I don't prepare something ahead of time, they would only be eating a bowl of cereal and milk.

Why You Should Make These Strawberry Vanilla Pancakes
I love to make a bunch of pancakes, baked eggs or oatmeal cups so they have a somewhat healthy breakfast to jump start their day. I hadn't made pancakes for a while and decided to try a fun new twist.
These strawberry vanilla pancakes are so easy and they reheat really well too. The best part is that they are lightly sweet so I just serve them with sliced strawberries and whatever other fruit they'd like and it's done.
Honestly I think my kids would eat pancakes every single day for breakfast and not get tired of them. That's why it's always good to mix it up and make all different kinds!
Recipe Tips
What I love about the Yoplait Original Yogurts are they have even more fruit in them. Your favorite strawberry yogurt that's been around for years now has more fruit! I love how smooth, creamy and versatile Yoplait yogurt is.
And I think these strawberry vanilla pancakes are proof of that!
I used whole what flour and added ground flax seed which both add some fiber. I am always looking for ways for my family to add fiber to their diets so this works out perfectly.
I have made these pancakes with raspberries, blueberries and a mixed blend of all the berries. The possibilities are endless so go ahead and get creative.
You can use this recipe as a base and customize them however you like. That's what I do!
I made a double batch of these fluffy strawberry vanilla pancakes and froze half of them. My kids were able to eat these for breakfast all week and boy were they happy.
That was until they quickly ran out and it was time to make more.
Not to self: You have three growing boys and you need to triple or quadruple the recipe. Doubling it just won't do.

Strawberry Vanilla Pancakes
Ingredients
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ cup ground flax
- ½ teaspoon salt
- 1 egg
- 2 tablespoons vanilla
- 1 cup milk of choice
- 6 ounces Strawberry Yoplait Original Yogurt
- 2 tablespoons 100% maple syrup
- 1 cup strawberries diced
Instructions
- In a large bowl, mix together flour, baking powder, baking soda, flax and salt.
- Ina separate medium bowl, mix together the egg, vanilla, milk, Yoplait yogurt and maple syrup.
- Add the egg mixture to the flour mixture.
- Do not over mix, the batter will be thick.
- Gently fold in the strawberries.
- Grease a griddle and heat up the griddle for 2-3 minutes until hot.
- Pour ½ cup of batter onto preheated griddle.
- Turn over once ready, typically when small bubbles appear.
- Flip pancake over and continue.
