Strawberry Vanilla Pancakes

Serves 4-6 people

Ingredients
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup ground flax
  • 1/2 teaspoon salt
  • 1 egg
  • 2 tablespoons vanilla
  • 1 cup milk of choice
  • 6 ounces Strawberry Yoplait Original Yogurt
  • 2 tablespoons 100% maple syrup
  • 1 cup strawberries diced
Instructions
  1. In a large bowl, mix together flour, baking powder, baking soda, flax and salt.

  2. Ina separate medium bowl, mix together the egg, vanilla, milk, Yoplait yogurt and maple syrup.

  3. Add the egg mixture to the flour mixture.

  4. Do not over mix, the batter will be thick.

  5. Gently fold in the strawberries.

  6. Grease a griddle and heat up the griddle for 2-3 minutes until hot.

  7. Pour 1/2 cup of batter onto preheated griddle.

  8. Turn over once ready, typically when small bubbles appear.

  9. Flip pancake over and continue.
