    Crustless Mushroom Quiche

    This Crustless Mushroom Quiche is loaded with protein and so much flavor! It's so simple to make, healthy and delicious without all the carbs and sugar.

    I have so many quiche recipes, it's so hard to choose which one is my favorite. These quiches are so easy and I love to make them on Sundays (my meal prep day) to have for the week.  

    I love preparing a bunch of healthy meals and snacks all at once to be prepared for the week. This helps to keep me on track, especially when I am already busy juggling my kids's schedules, work and everyday life.

    Meal prep also prevents me from indulging in unhealthy foods when I am busy and starving. You know that feeling when all of a sudden you just get so hungry you don't even care what you put in your mouth?

    Knowing I have healthy options will prevent me from any junk or unhealthy food that is staring me in the face. That's why I like to have a crustless mushroom quiche on hand to avoid temptation.

    If you are looking for some other healthy crustless quiche recipes, you will love this Asparagus Feta Bacon Quiche and my Veggie Crustless Quiche. These would be even more delicious with some Apple Chai Latte, Chamomile Latte and definitely this Low Carb Bulletproof Hot Chocolate!

    Why You Should Make This Crustless Mushroom Quiche

    You can make these into mini quiches and use ramekins or even muffin tins.  This helps with portion control and you can use whatever vegetables you have on hand.

    This crustless mushroom quiche can be made according to whatever ingredients you have on hand.   They are packed with protein and also it's a good way to sneak in vegetables for your kids (and you 🙂 )

    I always recommend that you eat protein with every meal and snack and this is an easy way to do it.  Have I told you how much I love these?

    Recipe Tips

    If you are watching your cholesterol and want to cut back on fat, you can easily swap 3 whole eggs and 9 egg whites for the 6 whole eggs. Don't worry, you will still have a bunch of protein without some of the cholesterol and fat.

    I like to use the sun-dried tomatoes that are dry and not in oil. This will also cut back on unnecessary fat and calories.

    You can also use another cheese if you'd like in this crustless mushroom quiche. I've made this with Cheddar,Pepper Jack and Feta and they were all delicious.

    This Crustless Mushroom Quiche is loaded with protein and so much flavor! It's so simple to make, healthy and delicious without all the carbs and sugar.

    Ingredients

    • 6 eggs
    • 1 cup sun-dried tomatoes sliced
    • 1 cup artichoke hearts sliced
    • 1 cup portobello mushrooms sliced
    • 1 tablespoon olive oil
    • ¼ cup Gruyere cheese shredded

    Instructions

    • Preheat oven to 375 degrees. Grease or spray a casserole dish or pie dish and set aside.
    • Place sun dried tomatoes, artichoke hearts and mushrooms in pan with olive oil.  Saute for 4-5 minutes until soft and place in prepared dish.
    • In a large bowl, add eggs and beat until frothy.  Pour into prepared dish ontop of veggies.
    • Sprinkle with shredded cheese.  Bake at 375 for 35 minutes or until the top is set and the edges are golden brown.

    Notes

    To store: Place in an airtight container in the refrigerator for up to 5 days.
