    Oatmeal Raisin Bars

    Simple to make, healthy and delicious, these Oatmeal Raisin Bars are my new go-to healthy snack bars for my family! These are gluten free and dairy free too.

    As a mom of 3 busy little boys, I am looking for new, delicious snack ideas.   And mainly because my little guys are always hungry.  

    I never knew that little people could eat so much. I am almost afraid to see how much they eat when they are teenagers.

    I love these Oatmeal Raisin Bars because they are loaded with fiber and made iwth alll wholesome ingredients.

    If you are looking for more healthy snack recipes, you will love this Roasted Chickpea Trail Mix, Apple Pear Nachos and definitely these No Bake Almond Cranberry Energy Balls!

    These would be extra delicious with some Apple Chai Latte, Eggnog Latte, Low Carb Bulletproof Hot Chocolate or even some Spiked Apple Cider!

    Why You Should Make These Oatmeal Raisin Bars

    Now that I am getting back on track post-surgery, I am starting to make my kids snacks again.  You know what's not easy?  Finding one snack that all 3 of them will eat.  

    This one doesn't like coconut, the other one doesn't like peanuts, you get the idea.  Until now!

    These oatmeal raisin bars get a thumbs up from all of them! Healthy, easy to make and kid approved.

    And why not give your kids (or yourself) a healthy snack with trusted ingredients instead of all of those store bought snack bars which have unnecessary additives and sugar?  Don't get me wrong, there are plenty of times I give my kids pre-packaged bars and the world doesn't come to an end.

    It's all about moderation, right?  When I have the time, I do love creating healthy, homemade bars, just like these.

    Recipe Tips

    These oatmeal raisin bars can be customized to whatever you and your family likes. You can add some other dried fruits and nuts, chocolate chips, whatever they like.

    But first, make them THIS way because they really are that good.

    And I personally love the crunchy texture of the almonds in these bars.  But since I've made them at least 4 times now, I've made them with cashews, peanuts and walnuts too.  

    You can also switch up the nut butters as well.  I can't wait to make these with sunflower seed butter too for my kids' friends that have nut allergies (and of course omit the almonds).  

    These are also gluten-free, dairy-free, vegan and crazy easy to prepare. Make these on your meal prep day and have a snack ready all week.

    Oatmeal Raisin Bars

    Ingredients

    • 2 cups rolled oats gluten free
    • 1 teaspoon cinnamon
    • 1 teaspoon baking powder
    • ¼ cup ground flax
    • ½ teaspoon salt
    • 1 cup unsweetened almond milk
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • ⅓ cup 100% pure maple syrup or honey
    • ½ cup raisins
    • ¼ cup sliced almonds

    Instructions

    • Preheat oven to 350 degrees. Grease an 8 x 8 pan with baking spray, butter or coconut oil or line with parchment paper.
    • Mix oats, cinnamon, baking powder, flax and salt in a medium size bowl.
    • In a separate bowl mix together almond milk, vanilla, eggs and maple syrup.
    • Add dry mixture to wet mixture and mix well. Add raisins and almonds.
    • Place mixture into prepared pan and bake in preheated oven for 25-30 minutes until edges are golden brown.
    • Remove from oven and allow to cool completely before slicing into 16 bars.

    Notes

    To store at room temperature: Place cooled bars in an airtight container for up to 7 days.
    To store in the freezer: Place cooled bars in an airtight container for up to 3 months.
