Almond Oatmeal Raisin Bars

- 2 cups rolled oats gluten free
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ¼ cup ground flax
- ½ teaspoon salt
- 1 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 2 large eggs
- ⅓ cup 100% pure maple syrup or honey
- ½ cup raisins
- ¼ cup sliced almonds
Preheat oven to 350 degrees. Grease an 8 x 8 pan with baking spray, butter or coconut oil or line with parchment paper.
Mix oats, cinnamon, baking powder, flax and salt in a medium size bowl.
In a separate bowl mix together almond milk, vanilla, eggs and maple syrup.
Add dry mixture to wet mixture and mix well. Add raisins and almonds.
Place mixture into prepared pan and bake in preheated oven for 25-30 minutes until edges are golden brown.
Remove from oven and allow to cool completely before slicing into 16 bars.
To store at room temperature: Place cooled bars in an airtight container for up to 7 days.
To store in the freezer: Place cooled bars in an airtight container for up to 3 months.
