It’s so funny to me that I only started liking scones about 5 years ago.  My husband and I were away for our 10th anniversary at a fancy brunch and they had these Lemon Berry Scones.  They smelled out of this world and you all know how much I adore lemon and berries so I gave it a whirl. Even though I have always disliked scones, especially how dry they were, I loved these ones.  And I may or may not have eaten my husband’s scone too.

Sidenote:  A good scone won’t be too dry.  Now I know.

So now, as we approach our 15 year anniversary (gasp!) I wanted to make a new kind of scone for my hubby.  Since he is obsessed with chocolate, these were a no brainer.

The funniest part?  My kids and their friends ended up eating all of these and my poor husband didn’t even try one of them.  

Such is life with 3 boys.

For those that are intimidated by making scones because they might sound fancy, DON’T BE!

These are truly ridiculously easy to make.  I promise. And they go perfectly with a big cup of green tea.  Or coffee.  Your choice.

Gluten Free Chocolate Chip Scones

Course Breakfast, brunch
Servings 8 scones

Ingredients

  • 11 ⁄2 cups gluten-free all-purpose flour
  • 1 ⁄4 cup coconut flour
  • 1 ⁄2 teaspoon xanthan gum
  • 1 ⁄4 cup unrefined sugar
  • 2 teaspoons gluten-free baking powder
  • 1 ⁄8 teaspoon salt
  • 1 ⁄2 cup coconut oil
  • 2 large eggs
  • 1 ⁄3 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/3 cup chocolate chips

Instructions

  1. Preheat the oven to 400Β°F.
  2. Line a baking sheet with parchment paper or use a silicone mat.
  3. In a large bowl, mix together the flours, xanthan gum, sugar, baking powder and salt. Work in the coconut oil until the mixture is crumbly.
  4. In a separate bowl, whisk together the eggs, Greek yogurt, and vanilla until frothy. Add to the dry ingredients, stirring until well blended. The dough will be sticky.
  5. Fold in the chocolate chips.
  6. Drop the dough onto the parchment paper or silicone mat and form into a circle in the center of baking sheet. Cut circle into 8 triangles or use a cookie cutter to make 8 hearts.
  7. Sprinkle the scones with extra sugar if desired. Bake for 15–20 minutes, or until golden brown. Remove from the oven and let cool for at least 5 minutes before serving.

Go ahead and make these! Even if it’s not your anniversary, they look fancy but they are simple to make.  Trust me!

    Happy Anniversary! I LOVE a good scone! And yes, a good scone is not dry. I happened to cook with Ireland’s most famous chef a few years ago (Darina Allen) and she gave me some inside tips! These look scrumptious, and the ones you had a brunch sound delicious as well!

    I used to not like scones either…one bad, dry scone will do that for you. Now I know that good scones are NOT dry and I like those a whole lot better! Happy anniversary!

    So funny, I did not like scones forever either. I thought they stuck to the roof of my mouth. What convinced me, was when my sister brought me a panera scone when I was sick and a cup of hot tea. I am convinced now! And these look great. You need to make soon for your husband and hide from your boys πŸ™‚

    O.M.G. Just made, cooled and tasted these scones. THE MOST delicious gluten-free treat I have ever had!

    I’ve been pouring over all the regular & gluten-free scone recipes on Pinterest, since I purchased a bag of Bob’s Red Mill GF 1 to 1 All Purpose Flour, and even made one of ‘the other recipes’ last week, which I just barely tolerated out of desperate need for a treat, and couldn’t wait to throw away…..
    but THESE !!!!…..

    O.M.G.!!! Don’t ANY ONE dare go near these. I’ve made ya’ll all those gluteny yummies and could never have them since I was diagnosed with Celiac 2 yrs ago…..

    NOW, it’s MY TURN. LOL

    Thank you soooooooo much Lauren for this recipe!
    You KNOW I’ll be making these again & again. πŸ™‚

    (p.s. I didn’t have any coconut flour, so I used additional GF all purpose flour in it’s place, which has added xanthan gum, but I added an additional ΒΌ tsp xanthan gum to be safe…. used vegetable oil in place of the coconut oil which I had none of on hand… and used regular GF Light & Fit Vanilla Flavored yogurt, and added Β½ tsp of baking soda as well (afraid cuz last ‘disaster’ the scones were SO dense, I wanted to make sure I got a little lift this time). Next time I need to lower the amount of oil a bit. And there WILL be a next time!!)

    Dear, dear, dear Lauren…

    I just made a 2nd batch, only 3 days later…

    These came out even BETTER, if you can imagine that!
    I just cannot come up with the words to thank you beyond ‘thank you to the 9th degree’!

    Now, I gotta figure out how to hide them, before hubby wakes from his nap and smells this deliciousness. Hmmmmmm LOL
