Easy, chewy and delicious peanut butter cookies are perfect when you are looking for a sweet treat in no time.
I bet not one of you is surprised that these are peanut butter cookies.
Sigh.
I just can't quit you, peanut butter. And I never want to.
True confession time....
I have not been adding 1 tablespoon of peanut butter to my overnight oats or smoothies. It's more like, lots of tablespoons.
I don't know how or why it started, but I just got careless. And the fact that I am borderline obsessed with peanut butter doesn't help. I just continued to add that giant, heaping, enormous spoonful every time.
It just tasted so good and that whole moderation thing went out the window. Rats!
So, now that the kiddies are back in school and I can get back on track with my workout schedule ( I miss my bar method!) I need to go back to my 1 tablespoon of peanut butter. And hope that my pants won't be tight anymore...
Ok, confession time is over. Let's talk about these C O O K I E S!
I made these for my kids for a treat after dinner (yes, during the larger-than-life-spoonful time) and they loved them. Ok, ok, I might have tried one (or two) and was overjoyed. But I knew, I had to freeze these bad boys to avoid temptation. And I did. I freeze 3 of them in a plastic bag for each of my kids to have for dessert.
Whew! Temptation avoided. They are DELICIOUS!

Ingredients
- ½ cup peanut butter
- ¼ cup honey
- 3 tablespoons coconut oil softened
- ¼ cup oats
- 2 organic eggs beaten
- 1 teaspoon pure vanilla extract
- ½ teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon sea salt
- 3 tablespoons ground flax seed
Instructions
- Preheat oven to 350 degrees.
- Mix together peanut butter, honey and coconut oil until combined.
- Add eggs and vanilla and mix again.
- Add remaining dry ingredients until well combined.
- Place by spoonfuls onto silpat or baking sheet lined with parchment paper and bake in preheated oven for 12-15 minutes until edges are golden brown.
I think everyone has their kryptonite when it comes to food, right??? Mine has always been peanut butter, what's yours?

Has anyone tried a sub for the eggs like apple sauce or flax ? My son is allergic to eggs.

Not sure if it'll let me post the pictures but mine turned out almost cakey? They do not look anything like the pictures, the batter was oily and runny. Did you use powdered peanut butter? They tasted alright but I'm trying to figure out where I might have gone wrong. Thought I'd watch the video but it was pictures of cookies and not a tutorial video.

Oh no, I am sorry Sarah. The only thing I can think of because it happened to me is if you use natural peanut butter that isn't stirred well, it tends to be more liquid and runny? I used that once and the batter was oily too. I hope that helps!

I’m not sure this recipe is correct. I followed it to the letter, baked them 9 minutes and they were like tiny burned pancakes. Is this recipe real?

Hi Lena! Can you tolerate grain free oats? If not, maybe try a GF AP flour? I would love to know how they turn out!
