There is a TON of baking each year in my house for the holidays and I absolutely love it. I make all kind of cookies, brownies and bars and give them out to friends and family.
Who doesn't enjoy playing Christmas music and making a mess in my kitchen while baking 10-15 assorted cookies and bars? It's exhausting but I do still really enjoy it.
I make a whole bunch of varieties too. I make typical classic treats with sugar (unrefined of course) like my Christmas Chocolate Chip Cookies and Red Velvet Cookie Cups, but I also like to make sugar free desserts that I can eat too.
The truth is that most of us tend to overindulge around the holidays.
There's more treats and desserts available, people are stress eating and mindless eating and we are just busier than usual. That's why I don't feel so bad if I eat some of my sugar free treats.

Why You Should Make These Fudgy Chocolate Brownies
Many people can even gain between 5-15 pounds in just the weeks between Thanksgiving and Christmas. That's a lot of weight and as you get older it gets harder and harder to take off.
Trust me, I know from experience.
These chocolate brownies are made with just a few simple ingredients and are so easy to prepare. The best part (besides being super delicious) is that they are grain free, gluten free, low carb, keto and sugar free!
Now you can enjoy delicious treats without feeling guilty. And these yummy brownies take only 30 minutes to prepare.
Even a child can make these babies (with supervision possibly) but that just goes to show you how ridiculously they are to make. I promise.
I would guess that the hardest part is cracking the eggs, which might take a little skill and practice. But I have faith in you, and all of the kids out there!
Full disclosure here, I also like to bring desserts that are sugar free to parties and gatherings so I can actually eat something. Yes, I am happy to share but I am really ensuring that I can enjoy a sweet treat too.
Recipe Ingredients
- Butter - I use 100% grass fed, organic butter because it taste better.
- Eggs - I use cage free, organic eggs for more nutrients and they definitely taste better too.
- Monk Fruit or other sugar free alternative - I used the granular form of Monk Fruit for this recipe. The brand I use all the time is this one.
- Almond flour - I like to use superfine almond flour in these bars which is a grain free, almond flour made from whole, skinless almonds. The fine consistency lends to a light crust on these cheesecake bars.
- Cocoa powder - You will need to read the ingredients in your cocoa powder as well and make sure there is no added sugar. This one only has organic cocoa in the ingredient list and nothing else.
I use dark cocoa powder because I love dark chocolate and I love the deep color, but you can use whatever you like. I have also made them with regular cocoa and they were just as yummy. - Baking powder
- Sugar free chocolate chips - Please read the ingredients for your sugar free chocolate chips. Many of them contain large amounts of sugar alcohols which can cause stomach upset and diarrhea. I use these sugar free chocolate chips all the time.
- Vanilla extract - I use pure vanilla extract which doesn't contain any artificial flavors or additives, it's just pure vanilla made from alcohol.
How To Make These Fudgy Chocolate Brownies
In a mixing bowl, cream together butter, sugar and vanilla for about 2 minutes.
Add eggs one at a time, mixing well. Set aside.
In another bowl, whisk almond flour, cocoa powder, baking powder, salt and chocolate chips. Mix until all chocolate chips are mixed throughout.
Slowly add the flour mixture to the wet ingredients. Mix until fully combined.
See how easy these are?
Just pour the batter into the greased pan and bake. BOOM!
Low carb, sugar free, grain free, gluten free chocolatey deliciousness.
You don't even need an electric mixer to make these. There's nothing that good old hand stirring with a big wooden spoon can handle.
You might get in a little exercise too and yes, I totally count that for my daily workout.
Bake for 18 to 20 minutes until the center is set.
The texture is perfect, they aren't too crumbly and do not fall apart. Isn't that annoying when they completely break apart?
I mean, don't get me wrong I will eat all the crumbs, but I just don't like them to be too messy. And I promise, these are not.
Perfectly fudgy inside and crispy on top and the edges. My kids love those extra crispy corners.
Recipe FAQ's and Expert Tips
If you are worried about portion control and possibly overeating these brownies, go ahead and freeze the leftovers (if you have any!) I like to take one out and leave it on the counter to thaw out for 10-15 minutes and the texture and taste is still incredible.
But just keeping it real, I have been known to eat these straight out of the freezer.
I didn't break my tooth (thank goodness) and my chocolate craving was taken care of. Easy peasy!
The best part of these brownies is that you can completely customize them to your liking. Go ahead and add ¼ cup sugar free chocolate chips, or even sugar free white chocolate chips, sugar free peppermint chips, chopped walnuts (I personally don't like nuts in my baked goods) or even swirl in some nut butter!
The possibilities are endless, go for it!
Once brownies are completely cooled, place in an airtight container and store in the refrigerator for up to 5 days.

Fudge Keto Chocolate Brownies
Ingredients
- 10 tablespoons butter softened
- 3 eggs room temparture
- ⅔ cup Monk Fruit or other sugar free alternative
- ½ cup Almond flour
- ¼ cup cacao or cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup sugar free chocolate chips
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees F.
- Grease an 8 x 8 pan with spray, coconut oil or butter.
- In a mixing bowl, cream together butter, sugar and vanilla for about 2 minutes.
- Add eggs one at a time, mixing well. Set aside.
- In another bowl, whisk almond flour, cocoa powder, baking powder, salt and chocolate chips. Mix until all chocolate chips are mixed throughout.
- Slowly add the flour mixture to the wet ingredients.
- Mix until all flour mixture is incorporated.
- Pour into prepared pan and spread evenly.
- Bake for 18 to 20 minutes until the center is set and the edges are separating from the sides.

Sooo yummy, they were delicious ‼️.. I did a bit of additional ingredients, I added a scoop of protein powder to the dry, also for my sweet part, I took about 1/4 of hot water to my small blender and put in 7 pitted dates and pure-aided them added to the wet, also I cut butter 🧈 in half(5 TBS.), added (5 TBS) of mayonnaise, to wet.. WOW THEY ARE DELICIOUS, and good for my husband’s diabetes..

So the batter came out SUPER thick. I used coconut flour instead of almond flour because it’s finer. Is that why?

Hi Nik. Yes, that is why they came out thick. Unfortunately coconut and almond can't be swapped evenly in recipes. About 1 cup almond is equal to only 1/4 cup coconut and there needs to be more liquid and eggs with the coconut flour recipes. Sorry, just not an easy way to adapt them. I have only made these brownies with almond flour.
