    Chocolate Roasted Chickpeas Recipe

    This Chocolate Covered Roasted Chickpeas recipe is simple to make with just 5 simple ingredients. Crunchy, sweet and packed with protein and fiber, these roasted chickpeas crazy delicious. Added bonus, they are vegan and gluten-free too!

    I bought this bag of Chocolate Vanilla Roasted Chickpeas at Whole Foods last week.  They were good and they inspired me to make this recipe (which is way better by the way).  

    This was perfect for me because it really is easy to make.  Only 5 ingredients and minimal prep, what could be easier?

    Chickpeas are loaded with protein and fiber and so incredibly versatile. Sweet and Spicy Roasted Chickpeas, Roasted Chickpea Trail Mix, Squash Noodles with Kale Pesto and Roasted Chickpeas and Chickpea Tikki Masala are all super tasty.

    All of these would be even more yummy with some Low Carb Bulletproof Hot Chocolate, Apple Chai Latte, Eggnog Latte and definitely some Spiked Apple Cider!

    Why You Should Make This Chocolate Roasted Chickpeas Recipe

    Keeping healthy snacks on hand has always been a priority for me, especially ones that are packed with protein and fiber. I have always loved roasted chickpeas and have always made savory ones and I am so happy I decided to mix it up with this sweet version.

    These roasted chickpeas are the perfect sweet and salty snack that you can make ahead of time and are convenient enough to take with you on the go.

    The best part is that these are so simple to include in your meal prep because they take. only 30 minutes to prepare.

    How To Make This Chocolate Roasted Chickpeas Recipe

    Preheat oven to 400 degrees F. Rinse, drain and thoroughly dry the chickpeas (very important).

    Spray baking sheet with cooking spray and place dried chickpeas on a pan. Sprinkle with salt

    Roast for 20 minutes, making sure to shake the pan half way though, until chickpeas are golden on the outside and crispy.

    Mix remaining coconut oil, cocoa and sugar in a bowl.

    Go ahead, lick that spoon and all of that chocolate deliciousness...

    Add roasted chickpeas and stir until thoroughly combined.

    Allow to set on parchment paper and let cool in the refrigerator for at least 30 minutes. And BAM!!  Your new obsession has been created.

    Ingredients

    • 15 ounce can of chickpeas or garbanzo beans
    • ¼ teaspoon salt
    • 1 tablespoon coconut oil slightly melted
    • 1 tablespoon + 1 teaspoon unsweetened cocoa powder
    • 1 teaspoon unrefined sugar

    Instructions

    • Preheat the oven to 400 degrees.
    • Rinse, drain and thoroughly dry the chickpeas. (They must be completely dry or they won't be as crunchy)
    • Spray baking sheet with cooking spray (I used a coconut oil spray).
    • Place chickpeas on the pan.
    • Sprinkle with salt.
    • Roast for 20 minutes, making sure to shake the pan half way though, until chickpeas are golden on the outside and crispy.
    • Mix remaining coconut oil, cocoa and sugar in a bowl.
    • Add roasted chickpeas and stir until thoroughly combined.
    • Allow to set on parchment paper and let cool in the refrigerator for at least 30 minutes.
    • Enjoy!

    Notes

    To store: I usually place these in a plastic bag that is a little bit cracked open. If moisture gets in there they will become soggy and no longer crisp so my best advice is to eat them all the first day.

        Hi Giselle! If there were any chickpea skins left over after rinsing or roasting, I just discarded them.
