    Pina Colada Popsicles

    Pina Colada Popsicles are the perfect healthy, refreshing treat.  Made with just three simple ingredients, this popsicle recipe contains protein from the Greek yogurt and have no added sugar.

    If you are like me, you are so ready for the summer and warm weather.  This winter was the absolute pits.  I am really looking forward to hot, summer days and those cold, refreshing treats.  And who doesn't love a virgin Pina-colada?

    I can't think of a better and more delicious way to cool off than with this homemade Pina Colada Popsicle recipe. They might look fancy and pretty but I promise they are super easy.

    Do you remember Froze-Fruit bars? Wait, do they still make them? That's what I was trying to recreate (with the chunks of pineapple) but without all of the unnecessary sugars and additives.

    Why You Should Make These Pina Colada Popsicles

    This delicious homemade popsicle recipe is so nutritious and simple to make. I love that I can control the ingredients in these popsicles, unlike the ones in the grocery stores that contain all of those unnecessary additives and sugar.

    I didn't make these popsicles alcoholic, but if you'd like to add some rum to the yogurt/milk mixture, go for it!  Maybe make half of them with rum and half without.  

    This way when your kids enjoy their treat, you can have your "adult treat".  Everyone wins! Just make sure you remember which ones have the alcohol in them!

    How long do these popsicles take to set and harden?

    Typically they freeze in about 4-6 hours but you can also leave them in the freezer overnight.

    How long can you store these homemade popsicles for?

    I would say they can last in your freezer for up to 6 weeks, if they last that long!

    Can I store these Pina Colada Popsicles without being in the mold?

    Yes, you definitely can store them out of the molds. Simply remove them form the molds and place in a large plastic bag. Place a piece of parchment paper or wax paper in between the popsicles to prevent them from sticking together.

    Ingredients

    • 1 ¼ cup coconut Greek yogurt
    • ¼ cup light coconut milk
    • 2 ½ cup diced pineapple divided

    Instructions

    • In a small bowl, mix together yogurt and milk until blended.
    • Take ½ cup of pineapple and stir it into the yogurt mixture.
    • Take remaining pineapple and blend in blender until smooth, but you can leave it as chunky as you'd like.
    • Pour blended pineapple onto bottom ¼ of popsicle mold.
    • Next pour yogurt mixture, then more blended pineapple until filled to the top (leaving a half inch room).
    • Freeze for a few hours until frozen solid.

    Notes

    To store: Cover Pina Colada Popsicles in the popsicle molds and store in the freezer for up to 3 months.

      Couldn't find coconut greek yogurt, so I just subbed regular coconut yogurt. Not quite as healthy, but they are so good! And I still feel better giving these to my kids instead of sugary popsicles. 🙂

      These look delicious! With the temp already in the 90s in San Diego, I am on the constant look out for yummy, cold treats for my boys and since I just started a new exercise routine and am trying to eat healthier, these will be perfect for me as well!
