This pizza is simple to make and is so flavorful, no one would guess show healthy it is. With all of the vitamins an nutrients in the kale, you can go ahead and sprinkle some extra Manchego on there!
I love all leafy greens, and kale is number one on the list. I was excited to try Earthbound Farm Kale Italia Blend, an organic mix of baby kale, arugula and radicchio.
My first thought was to make a huge salad with fruits and nuts, but then I thought of how delicious a kale pizza would be. Most of you know I am not a huge cheese lover, but I do like hard cheeses, like Manchego.
Side note: I made this pizza again for my husband with goat cheese and he went crazy for it. But my husband really loves goat cheese, unlike me.
Bottom line, use what cheese you like. And if you don't like cheese, check out pretty it looks with just the kale alone.
I absolutely love Manchego cheese, it's definitely my favorite. I love most hard cheeses but Manchego definitely takes first place.
Again, go ahead and use what you have in the refrigerator to mix it up and make life easier.
Although I do love my kale, you can easily substitute with whatever leafy greens that you like. I can tell you that I have made this with spinach and it was just as delicious.
Use whatever you like and whatever you have in your refrigerator. We need to simplify things these days.

I know we can use some more of those too. Remember when foods are bright and colorful that means that they are super healthy and packed with antioxidants and nutrients.
The more colorful the better!
I try to remind my kids of this to so they can make healthy choices when they aren't with me. If you just so happen to eat beige colored foods, add some colors to balance it out and add some more nutrition.

Ingredients
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic minced
- ¼ cup onion minced
- 2 naan bread or flatbread
- 5 ounces Earthbound Farm Kale Italia
- ½ cup freshly grated Manchego cheese
- ½ cup crumbled bacon
Instructions
- Preheat oven to 350 degrees.
- Place oil, onion and garlic in large sauce pan.
- Cook for 2-5 minutes until softened.
- Add kale and cook for another 2-3 minutes until wilted.
- Place naan bread or flatbreads on baking sheet. Top with kale.
- Sprinkle with cheese and bacon and bake for 10 minutes until bread is crispy and cheese has melted.
- Serve immediately.

I've made this a couple of times and it's a big hit in my house. Manchego on pizza is genius. I'm thinking of grilling the flatbread next time instead of baking in the oven to give it more of a brick oven flavor

Hi. We're big fans of Earthbound Farm in my family. Especially Kale. Now I've made grilled pizza before with Kale but used Goat cheese. Hi Jennifer! My rule of thumb is everything in moderation. I definitely recommend clean eating and I don't recommend limiting whole food groups unless there is a food allergy or intolerance.
