I can never have too many chicken recipes these days. Chicken is so versatile, loaded with protein and low in carbs and fat so I make it often, especially recipes like broccoli cheddar stuffed chicken.

Why You Should Make This Broccoli Cheddar Stuffed Chicken
If you are trying to add protein to your diet as a goal for 2025, this broccoli cheddar stuffed chicken is for you. There are over 50 grams of protein and only 4 carbs per serving.
I try to eat at least 30 grams of protein with each meal so this is exactly what I am looking for. I also watch how many carbohydrates I eat each day to help reduce inflammation and manage my hormones so this stuffed chicken recipe is perfect.
Being that this only takes 30 minutes to prepare, you can even make it on a busy weeknight.
You can also substitute different vegetables for the broccoli if you'd like. I've made it with cauliflower, spinach and frozen mixed veggies (because that's all I had in the house) and they were all delicious.
The same goes for mixing up the cheeses in this stuffed chicken recipe. Use what you have in the house.
Recipe Ingredients
- Chicken breasts - Choose skinless, boneless chicken breast and if possible, organic. I know it can get expensive so I buy a bunch when it goes on sale.
- Old Bay Seasoning - One of my favorite seasoning blends, Old Bay is slightly spicy and slightly sweet. I love it.
- Extra virgin olive oil - I love my EVOO. Some of those benefits are that extra virgin olive oil is anti-inflammatory, it may help prevent heart disease and diabetes and may even help to lower cholesterol levels.
- Broccoli - You can buy a head of broccoli and chop it or make your life easier and buy a bag of pre-chopped broccoli. It's a great time saver for this broccoli cheddar stuffed chicken.
- Cheddar cheese - I use freshly shredded Cheddar cheese in this recipe because I really think it tastes so better. But if you already have pre-shredded Cheddar cheese and want to use, go for it.
- Cream cheese - I use full fat cream cheese for better taste, but you can use whatever you like or what you have in your house.
How To Make This Broccoli Cheddar Stuffed Chicken
Preheat the oven to 375 degrees. Using a sharp knife, slice the chicken breasts in half lengthwise to make a pocket for the filling of broccoli and cheddar cheese.
Season the chicken breasts with salt and Old Bay Seasoning.
In a bowl, combine the ingredients for the filling.
Stuff each chicken breast with the prepared broccoli cheddar filling and sprinkle more Old Bay seasoning on top.
Brush the top of the chicken with olive oil and bake for 25-30 minutes until cooked through.

Ingredients
- For the chicken:
- 4 large chicken breasts
- 1 teaspoon salt
- 2 tablespoons Old Bay Seasoning
- extra virgin olive oil to brush on top
- For the stuffing:
- 1 cup broccoli chopped
- ½ cup cheddar cheese shredded
- 3 tablespoons cream cheese
- salt to taste
Instructions
- Preheat the oven to 375 degrees.
- Using a sharp knife, slice the chicken breasts in half lengthwise to make a pocket for the filling.
- Season the chicken breasts with salt and Old Bay Seasoning.
- In a bowl, combine the ingredients for the filling.
- Stuff each chicken breast with prepared filling and sprinkle more Old Bay seasoning on top.
- *Optional- place toothpick through chicken breast to keep it together.
- Brush the top of the chicken with olive oil and bake for 25-30 minutes until cooked through.
