    I am a self-professed egg addict. Eggs will always be my first choice, any time of the day.

    It wasn't the cheese or even the yogurt that I missed, it was the eggs.  It's always about the eggs for me. I am always looking for more healthy egg recipes!

    Meanwhile, you will love this Overnight French Toast Casserole, Healthy Breakfast Bowl, Low Carb Bagels, Coconut Flour Pancakes and definitely these Sugar Free Blueberry Scones!

    These would be extra delicious with some Apple Chai Latte, Eggnog Latte, Low Carb Bulletproof Hot Chocolate or even some Spiked Apple Cider!

    Why You Should Make These Recipes

    I collected this fabulous group of healthy egg recipes while I was recovering from surgery. Even so, the idea for this collection started when I was in the hospital, missing eggs (and all food really).  

    At this time, after not eating or drinking anything for 9 days, I was finally allowed to order from the hospital menu.  Guess what I ordered?

    Yup, eggs.

    As a matter of fact, these eggs did not look anything like the ones in these recipes I am sharing with you.  Brace yourself...

    Would you believe they called that a vegetable frittata?  I picked on the bran muffin, drank my green tea and dreamt of all the delicious ways I can make eggs.  

    Eggs are loaded with protein, healthy fats and choline which helps support mood and memory. They are low in calories, carbohydrates and fat.

    And I knew my first post that I would do on my own would be a fabulous collection of egg recipes. For one thing, these look SO much better than that "vegetable frittata" from the hospital.

    Above all, I am home and feeling so much better. I'm going to make all of these healthy egg recipes!  Which one should I start with?
