    Roasted Chickpea Trail Mix

    Simple to prepare and made with all wholesome ingredients, this Roasted Chickpea Trail Mix is a healthy snack that can be taken with you wherever you go! This trail mix is vegan, gluten free, dairy free and loaded with protein and fiber.

    Everyone has their "witching hour", right?

    I used to think of it as the time of the day when my infant would be cranky.  But now I think of it as the time of the day when I start mindlessly snacking.

    So when does your "witching hour" begin?

    Mine is definitely from 3:30-5:30.  Ok, that's two hours, but you get the idea.  I am getting snacks for my kids, helping them with homework and most likely doing ten things at once. Because you know women are the best multi-taskers EVER.

    If you are looking for more healthy snack recipes, you will love these No Bake Almond Cranberry Balls, Carrot Cake Bars, Slow Cooker Pumpkin Quinoa Granola and definitely these Low Carb Key Lime Truffles!

    These would be extra delicious with some Apple Chai Latte, Eggnog Latte, Low Carb Bulletproof Hot Chocolate or even some Spiked Apple Cider!

    Why You Should Make This Roasted Chickpea Trail Mix

    I always try to have my healthy, portion controlled snack ready, but some days I end up eating my kids' snacks AND my good intentioned nutritious snack.  

    I realize that I need to make every effort into having my own nutritious, protein-packed snacks to try to prevent my mindless overeating.

    I love snacking on roasted chickpeas.  The one problem with them is that they are seriously addictive.

    And, well, we all know you shouldn't eat an entire can of beans in one serving, right? Right.  Especially me since I have major intestinal issues.

    Recipe Tips

    I thought if I added some other healthy ingredients and make it into a trail mix, then I could stretch it out longer and make the most amazing, delicious, healthy snack in the entire world.

    What's also amazing about this trail mix is that this is completely customizable to whatever you like.  One week I added dried blueberries, one week I added some granola, another time I added almonds, the possibilities are endless.  

    Go ahead and use whatever you have in your house.

    After I prepare this for the week, I divide them up into 8 even portions and place in plastic bags or airtight containers so we can easily access a portion controlled snack.

    Ingredients

    • 2 cups roasted chickpeas
    • 1 cup cashews
    • ½ cup dried cranberries
    • ¼ cup chocolate chipss
    • ½ cup dried tart cherries
    • ¼ cup sunflower seeds
    • ½ cup puffed brown rice
    • ½ cup dried apricots

    Instructions

    • Completely cool roasted chickpeas.
    • Mix all ingredients together in a large bowl.
    • Separate into individual containers or resealable bags containing ¼ cup each.

    Notes

    To store , place in an airtight container or plastic bags and you can store in the refrigerator or at room temperature. It will stay free longer in the refrigerator.

      Wonderful mix of ingredients! Never thought to use chickpeas in a trail mix before! Loved this. In all honesty, I increased the chocolate chips because...well, chocolate! 😀 Wonderful trail mix. I love how healthy this is!...well, except for the extra chocolate chips I added... lol!

      My witching hour is between 10 and noon....sometimes I even end up eating my lunch at 10 because I'm so hungry! I love this idea for a snack mix with the roasted chickpeas!

      My snacking hours are the same as yours - it's the worst! I think it's boredom for sure! Not that I don't have a million times I could be doing, but I want to snack while I'm doing them 🙂 Love this idea to keep me on my healthy eating streak!

      This trail mix sounds amazing! It's perfect for a car trip or to take on a plane this summer! I love these easy combos where you can just toss what you have in the pantry into the mix. So easy!
