    Gluten Free Peanut Butter Chocolate Chip Granola

    Lightly sweet and deliciously crunchy, this Gluten Free Peanut Butter Chocolate Chip Granola will be your new favorite breakfast or snack!

    Most of you know that I am seriously obsessed with granola.   And I also adore anything that contains peanut butter and chocolate, especially dark chocolate.  

    So, (I thought to myself) why not make a recipe that contains both? YES!!  

    Who says healthy snacks can't taste delicious?

    Holy cow this is INCREDIBLE!  And the best part is, it's completely healthy.

    If you are looking for more healthy granola recipes, you will love this Sweet Cherry Quinoa Granola, Healthy Granola and definitely these No Bake Chocolate Peanut Butter Granola Bars.

    These would be extra delicious with some Apple Chai Latte, Eggnog Latte, Low Carb Bulletproof Hot Chocolate or even some Spiked Apple Cider!

    Why You Should Make This Gluten Free Peanut Butter Chocolate Chip Granola

    No junk in here unlike many of the other granolas hat are sold in the supermarkets.  This makes the perfect healthy snack, or breakfast or dinner.  

    One word of advice, I urge you to put it into individual plastic bags or plastic containers for portion control.   You seriously just might eat all of it at once.  

    Not that I would know anything about that, it's just words of advice.   But trust me on this, it is addictive.  

    Yes, I know, it's super healthy, but too much of anything isn't good for you.   Calories and fat add up pretty quickly, especially when something tastes this yummy.

    You will want to make this gluten free peanut butter chocolate chip granola every single week.  And your family will thank you.

    It's always easy to have healthy options available to avoid all of the unhealthy choices out there. That is why I pick one day a week to prepare some meals and snacks so we are ready to go.

    Typically my meal prep day is Sunday because that is what works bets with my schedule. I make snacks, slice veggies, grill chicken, slice fruit, you name it.

    The idea is to save time and always having healthy options on hand. It might seem like a lot of work but in the end it's worth it.

    I mean, why would you want to eat the crust of your kid's grilled cheese when you have a batch of this homemade granola waiting for you?

    Pour this peanut butter chocolate chip granola on your Greek yogurt (my personal favorite), pour in a bowl with almond milk, top this granola over fresh fruit, serve on top of pancakes... I am telling you there are endless possibilities here.

    And those chips aren't even worth all of those extra calories and fat. I promise.

    Ingredients

    • 2 cups gluten-free rolled oats
    • 1 cup uncooked quinoa rinsed and drained (I used tricolor)
    • ¼ cup chia seeds
    • ¼ cup sunflower or pumpkin seeds
    • ½ cup raw nuts chopped
    • 2 teaspoons cinnamon
    • ½ cup natural organic peanut butter or your nut butter of choice
    • ¼ cup raw honey
    • ¼ cup mini chocolate chips

    Instructions

    • Preheat the oven to 225 degrees. Line a rimmed baking sheet with silpat or parchment paper.
    • Place all of the ingredients except chocolate chips in a large bowl. Stir well.
    • Add chocolate chips and mix again.
    • Spread the mixture on the prepared baking sheet, spreading it out into an even layer. Bake for 60 minutes.
    • Allow to completely cool. ENJOY!

    Notes

    To store: Place in airtight container or individual plastic bags. You can store in the refrigerator for up tp 7 days or at room temperature for up 5 days.

      This granola is so tasty and has such a beautiful crunch! Love eating handfuls by itself or for breakfast with a touch of milk and fresh strawberries! YUM!
