Gluten Free Peanut Butter Chocolate Chip Granola
  • 2 cups gluten-free rolled oats
  • 1 cup uncooked quinoa rinsed and drained (I used tricolor)
  • 1/4 cup chia seeds
  • 1/4 cup sunflower or pumpkin seeds
  • 1/2 cup raw nuts chopped
  • 2 teaspoons cinnamon
  • 1/2 cup natural organic peanut butter or your nut butter of choice
  • 1/4 cup raw honey
  • 1/4 cup mini chocolate chips
  1. Preheat the oven to 225 degrees. Line a rimmed baking sheet with silpat or parchment paper.
  2. Place all of the ingredients except chocolate chips in a large bowl. Stir well.
  3. Add chocolate chips and mix again.
  4. Spread the mixture on the prepared baking sheet, spreading it out into an even layer. Bake for 60 minutes.
  5. Allow to completely cool. ENJOY!
