With just 8 simple ingredients, these easy, delicious Mini Bacon Cheese Balls are grain free, keto, low carb and gluten free!
Hey there, remember me???
It’s been a while, hasn’t it? Well I just checked and it’s actually been almost 1 1/2 years!
So let’s see…in the past year and a half LOTS of things have happened most of all, the dreaded Coronavirus. I still can’t believe it’s going on and my family and I are taking all precautions to be safe. We still go out to activities, sports and part-time school (4 hours a day twice a week, the rest is all on line) but we are always safe and cautious.
I’ve missed all of you and creating new recipes. I have been posting my recipes to social media to still keep them “alive” but I haven’t created anything new in ages! So needless to say, I am crazy excited to share these adorable Mini Cheese Balls with you all!
I wanted to share a recipe that reflects my lifestyle. I have been eating grain free, sugar free, gluten free and low carb for several years now to prevent another stomach/intestinal blockage. Studies show that eating sugar free can help reduce, if not eliminate, inflammation in the body and inflammation is one of the factors that can contribute to the blockages.
My last surgery was almost 4 years ago so hopefully this is working!
I also feel great and have so much energy. I don’t miss sugar at all and overall just feel so much better.
Now that I am a place where I can start creating recipes again I am very excited to share new recipes with you. My family still eats a clean, healthy and balanced diet. I am the only one that eats sugar free and I do what works for my family.
I don’t feel restrictive at all. I mean look at these cheese balls…
I am definitely not feeling like I am missing out AT ALL.
I also want you to keep in mind that I realize most of you don’t have a condition like me, but that you might be looking to REDUCE sugar, gluten and grains in your diet. Any small change is a good one so if you simply cut back on these things, you can reap the benefits.
So maybe mix some of my sugar free recipes with some of my good old clean eating recipes if that works for you. Remember, there is no one size fits all. Every body is different so you maybe have to mix it up a bit to see what works for you.
Ok, back to these adorable little cheese balls…
They are so simple to make and perfect for the holidays. They take just a few steps and 10 minutes to prepare. Easy peasy!
Just 8 simple ingredients are needed to make these. There’s nothing crazy in here, you can easily find all of these ingredients in your local grocery store.
Seriously though, how can you go wrong with bacon, cheese and nuts? The answer is…you can’t!
I like to bring appetizers that I can eat to other parties and gatherings to ensure I have something that I can eat. These little babies don’t last long, whether you are eating a low carb diet or not!
Depending on how large you make these balls, they make roughly 16-18 mini cheese balls. I like to serve them with toothpicks on the side to make them easier to serve and make them safer for Covid. This way no one’s hands are accidentally touching any of the other cheese balls.
Just trying to be cautious, like I said.
And then it makes me sad to think, are we even going to celebrate the holidays with our extended families? I really, really hope so. Covid has ruined too many important life events over the past months.
I bet you can easily use other hard cheese or finely chopped nuts if you’d like. I’d imagine walnuts would be equally as delicious. Let me know if you mix it up and try something else. I always love to hear substitutions!
Low Carb Mini Bacon Cheese Balls
- 8 ounces cream cheese, room temperature
- 2 tablespoon chopped onion
- 1 teaspoon parsley
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 3/4 cup chopped uncured Canadian Bacon, check labels to make sure it's sugar free
- 1 cup chedar cheese, shredded
- 1 cup pecans, finely chopped
Line a cookie sheet with parchment paper.
In a skillet, over medium heat, cook the Canadian bacon slices, 5 minutes
Chop the Canadian bacon into small pieces.
In a mixing bowl with a hand mixer, mix together cream cheese, chopped onion, parsley, onion powder, and pepper.
When all seasonings are well incorporated, add chopped cooked Canadian bacon and cheese.
Chill in the refrigerator for 5 minutes.
Using a medium cookie scoop (1 ½ tablespoon), scoop mixture into balls.
Roll each ball in chopped pecans. Refrigerate overnight.
Serve and Enjoy!
Such a pretty presentation too. I like to serve them with colorful sliced vegetables to make them even prettier. Think sliced red and yellow peppers, sliced carrots, cumbers and celery. Or maybe if you are trying to be festive, sliced red and green peppers!
You can either just pop these right in your mouth or smear them on a sliced veggie. Either way they are simply delicious!
