    Cilantro and Lime Roasted Potatoes

    Simple to make and loaded with flavor, these Cilantro and Lime Roasted Potatoes are everyone's favorite side dish!

    These might be potatoes but they are anything but plain.  How can you go wrong with cilantro and lime?  The simple answer?  You can't.

    I know people will think I am absolutely crazy, but I don't like potatoes. I probably would never eat a baked potato. Ever.  I like sweet potatoes and french fries, just not plain old potatoes. Until now.

    Why You Should Make These Cilantro Lime Roasted Potatoes

    These roasted potatoes have just the right amount of flavor to complement and main dish. I have served them with grilled chicken, steak, pork, salmon and I have even added these to salads ( I know it sounds weird but it's delicious!)

    These potatoes come out perfectly crispy on the outside and light and fluffy inside every single time. These are ready in no time.

    I have also prepared these ahead of time and then put them back in teh oven for 5 minutes to crisp them up right before serving.

    Cilantro and Lime Oven Roasted Potatoes

    Ingredients

    • 2 pounds red potatoes scrubbed clean and chopped
    • 1 teaspoon fresh cilantro minced
    • 1 tablespoon fresh lime juice
    • ½ teaspoon sea salt
    • ½ teaspoon garlic powder
    • ½ teaspoon ground cumin
    • 1 tablespoon jalapeno or more if desired
    • 1 tablespoon olive oil or avcoado oil

    Instructions

    • Preheat oven to 450 degrees.
    • Place all the ingredients in a large sealable plastic bag and shake well.
    • Pour potatoes onto baking sheet or baking dish and place in preheated oven for 35-40 minutes until light brown and crispy. Make sure to stir several times while cooking to avoid sticking.

    Notes

    To store: Place in airtight container in the refrigerator for up to 5 days.
    To reheat: I like to place potatoes in the oven for 5-10 minutes to get crispy. You can also reheat in the microwave for 1 minute but they will not be crispy.

      Made these cilantro lime potatoes to accompany grilled steaks and they were the hit of our meal! We all agreed that they'd go equally well with chicken or fish. Can't wait to make them again!
