    Black Bean Brownies with Pomegranates

    Black Bean Brownies with Pomegranates are made super easy with your favorite boxed brownie mix. These brownies are loaded with protein and fiber.

    I have a confession to make, I cheated making these brownies.  I wanted to make brownies from scratch, but instead I got sick and had to think fast.  

    So I cheated with handy dandy boxed brownie mix.  And they came out heavenly.

    Why You Should Make These Black Bean Brownies

    Most likely hearing beans in your brownie recipe sounds a little scary, but I promise you can't taste the beans in here at all! They create a fudgier texture and the pomegranates add a subtle sweetness.

    These delicious black bean brownies contain only 50 calories, 5 grams of protein and 3 grams of fiber each. You don't have to sacrifice flavor when it comes to eating healthy.

    If you don't like pomegranates you can easily leave them out or substitute with one of my suggestions below.

    Substitutions for Pomegranates in These Black Bean Brownies

    • Chocolate chips- I love using these vegan chocolate chips which are also GMO free and allergy friendly. You can also use these sugar free chocolate chips which I love to use for low carb and sugar free baking.
    • Caramel Chips- These sugar free salted caramel chips are my favorite add-ins for healthier baking.
    • Walnuts- These walnuts are finely chopped which makes them the perfect addition to baked goods. Walnuts also add some healthy fats as well.
    • Sliced almonds- One of my favorite nuts, these almonds add healthy fats and the perfect crunch.
    • Sunflower seeds- This might seem weird to some of you but these salty sunflower seeds add just enough salt and a whole lot of these black bean brownies.

    Black Bean Brownies with Pomegranates

    Black Bean Brownies with Pomegranates are made super easy with your favorite boxed brownie mix. These brownies are loaded with protein and fiber.

    Servings: 12 small brownies

    Ingredients

    • I box brownie mix I used Trader Joe's
    • 15 ounces black beans 1 can
    • 1 cup water
    • ¼ cup pomegranate seeds

    Instructions

    • Preheat oven to 350 degrees.
    • Lightly grease 8 x 8 baking pan.
    • Take can of beans and one cup of water and place in blender or food processor and blend until smooth.
    • Mix with brownie mix until well combined. Fold in pomegranates.
    • Pour into prepared pan and bake for 25-28 minute or until toothpick comes out clean when placed in the center. Cool on wire rack.

    Notes

    To store in the refrigerator: Place in an airtight container for up to 5 days.
    To store in freezer: Place in an airtight container for up to 3 months.

      I've made black bean cupcakes, but love that you added them to a mix to make it even easier. I want to try with a gluten free brownie mix!

      I love a good easy recipe!! Sometimes, you just need to use a box mix! I've never tried using black beans in brownies but I really want to. I love the idea!

      Perhaps you meant a 8x8 pan instead of 9x13? You said the yield is 12 small brownies. I am thinking 12 brownies in a 9x13 would be pretty big brownies!

      Hi Christy! Look for one that is Organic or even Gluten-Free. Read the ingredients and make sure there are no trans fats or too much sugar. Let me know how they turn out 🙂
