This Vanilla Protein Mug Cake is light, healthy and packed with protein and probiotics! Your snack (and dessert) game just got more exciting. Β The best part? It's ready in 5 minutes.
Disclaimer: I was compensated by PlantfusionΒ to create this recipe. However, like always, the opinions are entirely my own.
I know, I am late to the whole "mug cake" frenzy.
And yes, now I will admit that I wish I jumped on this bandwagon a whole lot sooner.
But from now on, this will be new favorite snack. And treat. And maybe breakfast some days. There's protein in there!
My version of a mug cake contains some added protein to help keep you full. Being that this is vegan, gluten free and dairy free it is healthy enough to eat for breakfast.
I guess I never realized just how easy these mug cakes actually were to make. And I also love that I ma not making a huge dessert which I just might be tempted to eating the whole thing.
Thee mug cakes are portion controlled and you don't have to share with anyone. I love it.
So yes, I added some melted chocolate chips and sprinkles to make this even more fun, but since I've had it both ways, I can't attest that it's equally delicious with or without the fun stuff.
On top of all this deliciousness, there is a ton of protein and probiotics in here!
If you are looking for more healthy desserts, you will love these Vanilla Chocolate Cheesecake Bars, Pecan Cheesecake Bars, Low Carb Red Velvet Cake and these Chocolate Chip Zucchini Cookies.
All of these would be even more yummy with someΒ Low Carb Bulletproof Hot Chocolate,Β Apple Chai Latte, Eggnog LatteΒ and definitely someΒ Spiked Apple Cider!Β
Also, my cookbooks are both on sale now and would make a great gift! The Everything Wheat Free Diet Cookbook and The Greek Yogurt Cookbook are both the lowest prices I have seen!
Why You Should Make This Vanilla Mug Cake
I wasΒ so excited to try this Plantfusion Vanilla ProteinΒ and I absolutely loved it. Β Plantfusion protein isΒ 100% plant-based (vegan),Β dairy, soy and gluten free, sugar free, top 8 allergen free, is smooth tasting compared to other vegan plant proteins and is the only powder on the market that includes probiotics and fermented foods to aid digestion!
I love my probiotics. What I love even more about Plantfusion is their "whole food" approach.
They use living fermented foods which contains tons of strains of naturally occurring probiotics that help to aid in digestion. I love this.
Remember, all proper health begins with optimal gut health, and that's where these probiotics come into the picture.
This whole thing takes 5 minutes to make! Β No more excuses that you don't have time for a healthy snack.
I mean, everyone has an extra 5 minutes, right?
I put this mug cake on the plate just to show you how easy it comes out, but you can easily just eat it right out of the mug to make it even easier and it have less clean up.

Why is the coconut oil needed?
lauren.kelly
Hi Teri! I imagine it would be too dry without the coconut oil? Let me know if you make it without it! Thank you!

That's so cool that it has fermented foods and probiotics in there! I NEED this. I try to eat sauerkraut every day but it's hard because I absolutely hate it. π I'd much rather eat this cake. π
