I know, I am late to the whole “mug cake” frenzy.

And yes, now I will admit that I wish I jumped on this bandwagon a whole lot sooner.

But from now on, this will be new favorite snack.  And treat.  And maybe breakfast some days.  There’s protein in there!

My version of a mug cake contains some added protein to help keep you full. Being that this is vegan, gluten free and dairy free it is healthy enough to eat for breakfast.

See where I am going with this?

I guess I never realized just how easy these mug cakes actually were to make. And I also love that I ma not making a huge dessert which I just might be tempted to eating the whole thing.

Thee mug cakes are portion controlled and you don’t have to share with anyone. I love it.

Yeah, I am talking to you, kids. We can each have our own. No, you may not eat mine.

This is a build up of frustration of years and years of my kids eating my food. 

I am over it.

So yes, I added some melted chocolate and sprinkles to make this even more fun, but since I’ve had it both ways, I can’t attest that it’s equally delicious with or without the fun stuff.

On top of all this deliciousness, there is a ton of protein and probiotics in here!

Vanilla Chai Protein Mug Cake

Course Dessert, Snack
Cook Time 2 minutes
Total Time 2 minutes
Servings 1 serving

Ingredients

  • 1 scoop Plantfusion Vanilla Chai Protein
  • 1/2 mashed ripe banana
  • 1/4 cup almond milk
  • 2 tablespoons coconut flour
  • 1 tablespoon ground flax seed
  • 1 teaspoon chia seeds
  • 2 teaspoons coconut oil
  • 1 tablespoon 100% maple syrup or honey but it won't be vegan
  • melted chocolate and sprinkles for topping optional, make sure to use dairy free chocolate chips to keep it dairy free

Instructions

  1. Add wet ingredients to a bowl and mix.
  2. Add dry ingredients until smooth.
  3. Slowly pour batter into microwave safe mug.
  4. Cook in microwave on high for 1-2 minutes (depending on the strength of your microwave) and until the middle is set.
  5. Let cool, then pour the mug cake out so it sits upside down on a plate.
  6. Top with

    That’s so cool that it has fermented foods and probiotics in there! I NEED this. I try to eat sauerkraut every day but it’s hard because I absolutely hate it. ๐Ÿ˜‰ I’d much rather eat this cake. ๐Ÿ˜€
