    Healthy Chicken Salad made with Greek Yogurt

    Simple to make, packed with 22 grams of protein and tons of flavor, this Healthy Chicken Salad will be your new favorite dish. Crunchy apples, walnuts, dried cranberries and creamy Greek yogurt, this chicken salad has a new healthy twist!

    Move over boring chicken salad loaded with unhealthy mayo, this healthy version is packed with protein, crunchy walnuts and apples and tart dried cranberries.

    I know many of us are trying to incorporate more protein in their daily diet and it can be difficult at times. Just one serving of this healthy chicken salad has 22 grams of protein in it!

    Food Insecurity in the United States

    Did you know that more than 49 million Americans struggle with hunger and 1 in 5 kids is food insecure. What exactly is food insecure?

    Whether they live somewhere where healthy, fresh food is scarce or they just don’t have the financial means to afford it, they aren’t getting the proper nutrition they need.  Pacific Foods is on a mission to donate 50,000 meals to families in need under their new program, #NourishEveryBody, by donating one meal for every post tagged @pacificfoods and #NourishEveryBody and shared on Instagram, Twitter or directly to their Facebook page.

    Why You Should Make This Healthy Chicken Salad

    Shelf-stable Pacific Foods Organic Diced Chicken Thigh Meat make this so there is no cooking required.

    There's no mayonnaise in it! All of the creamy goodness comes from plain Greek yogurt which also adds lots of protein.  

    It might look unhealthy, but it's extremely nutritious.

    This healthy chicken salad is will be ready in minutes and is perfect for meal prep day. Just make this on a Sunday and have lunch or dinner for the week.

    Easy, healthy and delicious.  There's so much to love here in this chicken salad.  Apples are in-season right now and cranberries are very fall-like, aren't they?

    My husband eats his chicken salad on a sandwich or on crackers.

     Me?  I love it in a big bowl of spinach!

    How To Make This Healthy Chicken Salad

    When I told you this was super easy, I was not exaggerating.

    Chop the celery, onion and apples and place in a bowl. Add the remaining ingredients and mix well.

    Ingredients

    • 6 ounces plain Greek yogurt
    • 11.8 ounces container Pacific Food Diced Chicken or 2 cups cooked chopped chicken
    • 1 stalk celery diced
    • ¼ cup onion diced
    • ¼ cup walnuts chopped
    • ¼ cup dried cranberries unsweetened
    • 1 apple diced

    Instructions

    • Mix all of the ingredients together in a large bowl until thoroughly combined.
    • Serve immediately or store in an air tight container for up to 4 days in the refrigerator.

      OK this just made my day! I eat chicken salad sandwiches about four days a week because I love it so much and find it to be a great post workout meal. And always on toasted wheat. Knowing that I can substitute greek yogurt for the mayo never even crossed my mind. Brilliant! (I probably should pick up your greek yogurt cookbook) Anyway cant wait to make this. And kudos to Pacific Foods for their compassionate and generous program. Very nice indeed.
