Easy, simple and delicious, this delicious Brown Rice Roasted Tomato with Feta Cheese will be your new go-to dish! This incredible brown rice salad can be served warm or cold and is super easy to make.

I was compensated by Minute® Rice to create this recipe. However, like always, the opinions are entirely my own. Promise 🙂

I usually get bored really quick with the salads that I make at home. I typically keep making the same ones over and over with the same ingredients.

The best way to get me out of my salad rut is to think outside the box, which led me to create this incredible dish. A friend of mine served a yummy brown rice salad at a party which inspired me to create this.

Make ahead salads that I can keep I the refrigerator and have my luck or dinner ready for the week are always a huge time saver. I usually meal prep on Sundays which saves time and keeps me on track.

If you are looking for some other easy to make, healthy salad recipes, you will love this Quinoa Black Bean Salad with Cilantro Lime Vinaigrette, Greek Artichoke Cauliflower Salad, Roasted Tomato Caprese Salad and definitely this Caprese Quinoa Salad!

Why You Should Make This Brown Rice Salad

I only like a few cheeses with Feta being first on my list. Soft cheese is not my favorite at all, so I will always choose harder cheeses first.

Using cheese (in small amounts) is a great way to add a bunch of flavor and still keeping it healthy.  Again, let's emphasize the words "small amounts".  I know many people can overdo it with cheese.

The weather is finally getting warmer and it's time to start lighting up our dishes (if you haven't already!)  I love using Minute® Brown Rice because it's ready in just 10 minutes and it's healthy.

It's one of those staples that should always be in your pantry at all times. So many salads are made with pasta and are loaded with high calorie dressings, but this one is bursting with flavor (hello roasted tomatoes!) and it's loaded with vegetables.

    Recipe Tips

This salad can be served and enjoyed either cold or warm. Personally, I love it cold and just eat it right out of the refrigerator. Go ahead and eat it however you'd like.

I have made this so many times, it is extremely versatile. One time I used roasted red peppers instead of tomatoes and it was divine.

I have also added cooked grilled chicken to this brown rice salad and loved it. You can even use shredded rotisserie chicken to save time.

I did not know that about you Lauren! I am a huge cheese lover but the texture of Brie turns me off. I love feta and love this salad!

I love Minute rice! I have both white and brown rice in my cupboard for those times when I need to eat quick. But the two, I like the white better and now you've given me an awesome recipe to make using it. With all of the added flavors, you really know how to amp up Minute rice!

Love all the amazing flavours you've used here! I rarely make brown rice during the week because it takes so long to cook, so I'm super excited to hear there's a shortcut option I can use... now I just need to figure out where I can find the brown Minute Rice. 🙂

I'm the resident cheesaholic in our house. I may have a slight problem with it. Feta is one of my favs, as is brown rice and lately, I've been warming up to kale, too! Gotta try this recipe soon, Lauren! Looks great!

Love this recipe! We make something similar with lentils added in too - but I love the idea of the roasted tomatoes! Thanks for the inspiration - definitely trying this!

My problem is that I love cheese a little too much! That being said, I have learned over time that a little goes a long way. This rice dish is something I'd happily eat for lunch or dinner!
