Lee made this simple yet scrumptious breakfast for us and I know I can't wait to make it. I am so into blueberries these days and you already know my love of chia. The more chia seeds the better!
Who couldn't use some more fiber and antioxidants in their diet, right?
Right.
The best part of this is that I can even make this on a busy school-day morning! And even though I love blueberries, I bet any fruit would be just as delicious in this.
Oatmeal is one of the few things that I am consistently eating these days. My appetite is coming back slowly and luckily my love affair with oatmeal really never left. No joke, I was worried my taste buds would change.

Blueberry Chia Oatmeal
Ingredients
- 2 cups rolled oats gluten-free
- 3 tablespoons chia seeds
- 2 teaspoons vanilla extract
- pinch of sea salt
- 1 cup blueberries
- 2 tablespoons honey or 100% maple syrup to make it vegan
- 4 cups almond milk unsweeteend
- 1 tablespoon lemon
Instructions
- Place all ingredients in a medium-size pot and bring to a boil at medium/high heat.
- Reduce heat to medium and let simmer for about 10 minutes, stirring often until oatmeal has thickened and most of the liquid has absorbed.
- Top with walnuts and fresh blueberries.
